Easy Roasted Peppers Recipe

Because we’re using miniature peppers instead of regular sized peppers, this recipe is super fast. These Mini Roasted Peppers only take about 15 minutes from start to finish to table.

You can eat these roasted peppers as a side to your steak, chicken or seafood dinner, or use them in many other recipes. These peppers are definitely part of our meal prep during the week. They’re so sweet and juicy, you can eat them as-is or use them in different types of recipes.

How To Make Mini Roasted Peppers

All you need to do is give your peppers a good rinse, dry them off and place them on a sheet pan.

Next it’s time for the seasoning. We LOVE this Ranch seasoning from Trader Joe’s on all kinds of vegetables, especially these mini peppers. But you can season them simply with salt and pepper if you like, or play around with different seasonings.

If you don’t have a Trader Joe’s nearby, you can use any brand of Ranch dry powder, like the type you use for making dressing.

Drizzle on olive oil and then add the Ranch seasoning, along with salt and pepper. Give the peppers a good toss to make sure all the peppers are coated in the oil and seasoning and then get them in the oven.

Roast the peppers at 450 degrees for 10 minutes, then remove from the oven and flip the peppers over so that the other side gets charred. When these Mini Roasted Peppers come out of the oven they are super sweet and roasted, just like this.

Just about anything you like, honestly. These mini peppers are loaded with good nutrition, including vitamin A and C, potassium, folic acid and fiber. A little pepper that packs a big punch!

How Do You Reheat Roasted Peppers?

Super easy, right in the microwave. Because these roasted peppers are soft already, you don’t need to worry about keeping the integrity of the pepper. So just microwave however many you want for about 30 seconds (or less) and eat them up or add them to you favorite dish!

How Long Will Roasted Peppers Last In The Fridge?

Definitely a week. I know the google says 4-5 days, but we make these ALL the time. You’ve got a solid week as long as you keep them in an airtight container in the refrigerator.

Need to make the peppers last longer? You can add olive oil to cover the peppers and they will last for up to two weeks. Usually our mini peppers don’t last that long since we’re chopping them up and adding them to salads, sandwiches and rice bowls.

Make these sweet Mini Roasted Peppers as a side dish for dinner, or to use in many different recipes! We add them to rice bowls, salads and use them as toppings for sandwiches and burgers!

Ingredients

  • 32 ounce bag mini peppers, rinsed and patted dry
  • 2 tablespoons olive oil
  • 1 tablespoon Ranch seasoning
  • 1 teaspoon kosher salt
  • Fresh black pepper to taste

Instructions

  1. Preheat oven to 450 degrees.
  2. Add peppers to a baking sheet and coat with olive oil, Ranch seasoning, salt and pepper.
  3. Toss the peppers, making sure to coat well in the oil and seasoning.
  4. Place the peppers in the oven for 10 minutes, then remove and flip the peppers over. Place the baking sheet back into the oven for another 3-4 minutes until the peppers are soft and roasted.
