Easy Chicken Spaghetti Recipe

Often when people think of chicken spaghetti they think of the creamy casserole with condensed soup and lots of cheese. As much as I’m down for a big bowl of that, my kids aren’t so much into the real gooey, cheesy things.

So our Easy Chicken Spaghetti is the perfect recipe for them! A couple of chicken breasts, cream cheese, your favorite jar of sauce, spaghetti and parmesan cheese is all you’ll need to make this pasta recipe. You can use leftover chicken or a rotisserie chicken too, just toss the shredded chicken in a few seasonings to flavor it up.

How Do You Make This Chicken Spaghetti In 20 Minutes?

If you decide to use leftover chicken or a rotisserie chicken, this spaghetti recipe will be done in 15. Basically the amount of time that you need to boil the pasta, then toss and serve!

Ingredients to make chicken spaghetti in a pot

Even if you’re starting out with chicken breasts, I promise this Easy Chicken Spaghetti will be on the table in just 20 minutes. A trick I like to use is to cut the chicken breasts into a few strips (depending on the size of your chicken breast, 2 or three) then season them and bake.

This allows for the chicken to cook faster and also get more seasoning on the surface of the chicken.

While the chicken is cooking, boil your spaghetti, drain and return back to the pot that you cooked it in. This will keep the pasta warm until the chicken is ready, but also become your spaghetti mixing bowl!

All that’s left to do is shred the chicken and toss it with the spaghetti, a jar of sauce, softened cream cheese and grated parmesan cheese. Serve in big bowls with more parmesan cheese on top and dinner is done!

What Other Kinds Of Pasta Can I Use For This Recipe?

Honestly, pretty much any pasta that you like. Obviously since this is a chicken spaghetti recipe, we like suing spaghetti. Any other long noodle will work too, fettuccine, bucatini, linguine, etc.

Don’t be afraid to grab some sort tube pasta for this recipe, either! Rotini would be perfect since all the creamy sauce will stick to the ridges, penne, rigatoni, you get the idea. The only thing I’d stay away from is small pasta shapes like orzo or ditalini.

Scale

Ingredients

  • 1 pound spaghetti
  • 1 1/2 pounds chicken breast (can also use rotisserie or leftover chicken, *see note)
  • Dried oregano, garlic powder, kosher salt and black pepper for seasoning the chicken
  • 25 ounce jar marinara sauce
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup grated parmesan cheese, plus more for topping

Instructions

  1. Preheat the oven to 400 degrees. Cut the chicken breasts into strips and place on a baking sheet that’s been sprayed with cooking spray. Cutting a larger breast into strips will not only help it to cook faster but allow more seasoning to get on the surface of the chicken.
  2. Season the chicken on both sides generously with the oregano, garlic powder, kosher salt and black pepper. Cook the chicken for 10-15 minutes, (depending on the size of your strips) turning over once in between cooking until the chicken is cooked through. Remove the chicken from the oven and place onto a board or a plate and cover with foil to keep warm.
  3. While the chicken is in the oven, cook the spaghetti according to the package directions, then drain and place back into the pot that you cooked it in. Turn the stove on low heat and add the sauce to warm through. Add the cream cheese and the parmesan cheese and whisk the sauce together until blended.
  4. Shred the chicken with two forks and place into the pot, stirring to combine.
  5. Taste for seasonings, adjust if needed and then serve in large bowls with extra parmesan cheese.

Recipe Notes

If using leftover chicken or a rotisserie chicken, shred the chicken and then toss in the oregano, garlic powder, kosher salt and black pepper to season the chicken before adding to the spaghetti.

Made this for dinner tonight and it was both super simple and wonderfully delicious. While waiting for the water for the spaghetti to boil, I started my chicken on the griddle. By the time the spaghetti was finished cooking, the chicken was done and shredded. Served it with a freshly baked boule of French bread, sliced and topped with garlic butter. The teenagers loved it, so it is a definite win.
