Make these sweet Mini Roasted Peppers as a side dish for dinner, or to use in many different recipes! We add them to rice bowls, salads and use them as toppings for sandwiches and burgers!

Ingredients
- 32 ounce bag mini peppers, rinsed and patted dry
- 2 tablespoons olive oil
- 1 tablespoon Ranch seasoning
- 1 teaspoon kosher salt
- Fresh black pepper to taste
Instructions
- Preheat oven to 450 degrees.
- Add peppers to a baking sheet and coat with olive oil, Ranch seasoning, salt and pepper.
- Toss the peppers, making sure to coat well in the oil and seasoning.
- Place the peppers in the oven for 10 minutes, then remove and flip the peppers over. Place the baking sheet back into the oven for another 3-4 minutes until the peppers are soft and roasted.
