We’re HUGE meatloaf fans around here…if you haven’t checked out our super popular Brown Gravy Meatloaf, you most definitely should. But we make all kinds of meatloaf recipes like a classic ketchup glazed meatloaf to a fancy Chicken Cordon Blue Meatloaf with layers of ham and cheese tucked inside a juicy chicken meatloaf.

A Healthy Meatloaf Recipe

And we’ve got more, trust me. These BBQ Meatloaf Muffins are a new addition to our meatloaf recipe collection and we’re loving them. For one they are crazy easy to make, no cooking up onions or garlic first, everything just gets mixed in a bowl and baked. The other reason we love these meatloaf muffins is because not only are they delicious but they are also a really healthy dinner recipe that our whole family loves!

You can make these meatloaf muffins with ground turkey or lean ground beef, we’ve made them both ways and both taste amazing. If you do use ground beef make sure to use a lean ground beef mixture so that the meatloaf isn’t too greasy as it cooks in the muffin pan.

Ingredients For BBQ Meatloaf Muffins

Here’s the basics that you’ll need for this mini meatloaf recipe. You can also add other ingredients like cheese, diced peppers, chopped broccoli.

Ground turkey or ground beef: Usually we make this recipe with ground turkey to keep it lighter, but if want to use beef make sure and buy a mixture with at least 85% ratio.

Garlic powder: We’re using garlic powder instead of fresh garlic to keep these meatloaf muffins easy.

Kosher salt: a great tip for tasting out the flavor of your meatloaf before cooking is to cook up a small meatball in a skillet to see how the flavor is. Adjust with more slat or pepper if needed before cooking up the whole meatloaf.

Black pepper: Fresh ground is best, you can add more or less pepper to your taste.

Egg: An egg helps bins the meatloaf together to hold its shape.

Dijon or spicy brown mustard: We typically use dijon but if you have spicy brown mustard that will work too.

Worcestershire sauce: We always add this sauce to our meatloaf recipes because it adds a depth of flavor you just can’t beat!

Breadcrumbs: Seasoned or plain breadcrumbs will bind the meatloaf together so the muffins hold their shape.

Bacon bits: Grab real bacon bits in a pouch, not the fake dried bacon bits because they won’t add much flavor. Of course you can also use real bacon that you’ve cooked and crumbled.

BBQ sauce: Use your favorite BBQ sauce to top these meatloaf muffins, any flavor you like will work!

How To Make BBQ Meatloaf Muffins

This is the easiest way to make meatloaf. No cooking up onions and garlic beforehand, although that does make for some tasty meatloaf, we’re just keeping this recipe simple so it can be made and on the table fast!

Add ground turkey (or beef) into a bowl along with mustard, Worcestershire sauce, an egg, breadcrumbs and a few seasonings. Mix it all together and add it to a muffin pan that’s been sprayed with cooking spray.

I use a large scooper to portion out my mini meatloaf muffins, but just divide the mixture evenly between the 12 wells. Next spoon over a couple of tablespoons of your favorite BBQ sauce and bake.

In just about 15 minutes they’ll be done! When they come out of the oven you can spoon over more bbq sauce or just serve warmed sauce on the side. Any flavor bbq sauce will do with this turkey meatloaf recipe so use whatever you have on hand.

What Can I Serve With This Meatloaf Recipe?

If you want to keep this a low carb dinner recipe, you can add some roasted vegetables or a salad on the side – or maybe even some cauliflower rice. Or if you’re into the carbs (we are) there’s plenty of side dish options too!

Can You Freeze Meatloaf?

Meatloaf is a great meal prepping recipe because you can make it ahead of time and reheat it for dinner, or you can make it and freeze it for a later date. Freeze these min meatloaf muffins without the sauce and then add the sauce right before baking.

You can pop the whole muffin pan in your freezer until the meatloaf is hardened and then take them out and place them in a resealable bag. Let the meatloaf defrost in the refrigerator for a couple of hours and then when you’re ready, put the mini meatloafs back into a muffin pan, add the bbq sauce and bake.

Ingredients

  • 1 1/2 pounds ground turkey or beef
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg, beaten
  • 2 teaspoons dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup breadcrumbs
  • 3 tablespoons bacon bits
  • 1/2 cup BBQ sauce

Instructions

  1. Preheat the oven to 375 degrees.
  2. Spray a muffin pan with non-stick cooking spray.
  3. Add all the ingredients to a large bowl (except for the BBQ sauce). Mix to combine and then portion out to fill each of the muffin wells, 12 total.
  4. Add a couple of tablespoons of bbq sauce to the top of each meatloaf muffin and bake for 20 minutes. Serve with extra bbq sauce on the side.
