How To Roast Cauliflower

Recipes like this Parmesan Roasted Cauliflower are so easy to make, but there are a few tips to making them turn out the best way possible!

One tip for making the best roasted cauliflower is to make sure your oven is turned up to 450 degrees. A hot oven really makes the cauliflower caramelized on the outside while still tender but not mushy on the inside.

Another area that people seem to struggle with is using enough salt. Unless you have high blood pressure or are trying specifically to cut down on your salt consumption, you need to add a good amount of salt here. Cauliflower is pretty bland so it needs to be seasoned properly. First with salt and pepper and then, for this recipe, with good parmesan cheese.

Roasting cauliflower in the oven couldn’t be easier to do! All you need to do is break the cauliflower into florets and get them onto a sheet pan. Drizzle the cauliflower with olive oil and then season the cauliflower with a good amount of salt and pepper.

Next add grated parmesan cheese, toss and get into the oven.

After about 25 minutes, pull the sheet pan out of the oven and give the roasted cauliflower a toss so that all the sides get good and crispy. You’re looking for those brown sides like you see in these pictures, that’s where all the flavor is.

When you get to the halfway point here, grab a piece of cauliflower and taste it to see if the seasonings need to be adjusted at all. Then back into the oven for another 20 – 25 minutes.

What Else Can You Add To This Roasted Cauliflower?

This simple side dish recipe is so delicious all on it’s own, but there are a few things that you can add too!

  • Chopped nuts like walnuts or pecans, or pignoli nuts
  • Chick peas
  • Carrots
  • Broccoli
  • Lemon zest
  • Chili flakes
  • Cumin
  • Curry powder

How Do You Store Fresh Cauliflower?

When you get your perfectly picked out head of cauliflower home from the store, you need to remove it from the plastic wrap fairly quickly. If you keep the cauliflower in the plastic it will get moldy pretty fast.

Place the head of cauliflower in a resealable bag with a paper towel to keep the moisture away. This should keep your cauliflower fresh for up to a week.

How Long Can I Keep This Roasted Cauliflower In The Refrigerator?

Ours usually doesn’t last too long, but you can keep this parmesan roasted cauliflower in the refrigerator for 3-5 days. The best storage is a container, but a bowl covered with plastic wrap will do also.

Cooked cauliflower does tend to have a smell to it, so if you don’t want it taking over your fridge, the best bet is a covered container!

Ingredients

  • 2 large heads of cauliflower, cut into florets
  • 1/4 cup olive oil
  • 2 teaspoons kosher salt
  • Fresh black pepper to taste
  • 1/4 teaspoon fresh grated nutmeg (optional)
  • 1/4 cup grated parmesan cheese, divided

Instructions

  1. Preheat the oven to 450 degrees.
  2. Add the cauliflower to a baking sheet and toss with the olive oil, salt, pepper, nutmeg and 2 tablespoon of the parmesan cheese.
  3. Roast for 20 minutes, then remove the sheet pan from the oven and toss the cauliflower. Return the sheet pan back to the oven and roast for another 20-25 minutes.
  4. Add the remaining 2 tablespoons of parmesan cheese to the cauliflower and serve.
