An Easy Side Dish with Roasted Cauliflower

We mentioned the low carb part of this Parmesan Roasted Cauliflower Gratin just because it’s an added bonus. If you happen to be following a low carb diet then this is the side dish recipe for you!

Even if you’re not on a low carb diet, this cauliflower gratin is really one of my most favorite cauliflower recipes. Cheesy, hearty and comfort food all comes to mind when I’m thinking about this cauliflower gratin…and most of all delicious.

You can serve this side dish for most any dinner, steak, chicken turkey, pork. You name it, this gratin recipe is going to go perfectly with all of those. And if you’re searching for that show stopping holiday side dish? This is it.

How Do You Make This Gratin Recipe?

This gratin starts by making roasted cauliflower. Roasted cauliflower is so easy to make and to be honest, I think we make it about once a week.

A drizzle of olive oil, salt, pepper and you’re good to go. Turn the cauliflower in the oven every 15 minutes so that the cauliflower gets crispy on all sides while it’s roasting. It’s the crispy parts that make roasted cauliflower actually addicting and crave-worthy.

Because when you’re talking about cauliflower, addicting and crave-worthy are pretty big shoes to fill.

Once the cauliflower is roasted and cooled, add it to the bowl of a food processor and blend until mostly smooth. You don’t want a total puree like baby food, we want some texture here is this Parmesan Roasted Cauliflower Gratin!

Mix the cauliflower with cheese, cream, a few seasonings and cheese and get it into an 8″ x 8″ or a 9″ x 9″ baking dish. Top with more cheese and breadcrumbs and bake until crispy on top and cheesy and creamy in the middle.

Can You Make This Cauliflower Recipe Ahead Of Time?

You most certainly can! Make this recipe through until right before baking and then store it in your refrigerator. Take the gratin our about 30 minutes before baking so that it comes to room temperature and then bake peer the instructions listed below.

What Different Types Of Cheese Can I Use In This Recipe?

Gruyere is our go to for this gratin recipe because of it’s nutty and sharp flavor. But we do have options, here’s a few ideas!

  • White Cheddar
  • Mozzarella or Smoked Mozzarella (will have a milder flavor)
  • Swiss
  • Gouda
  • Provolone

Ingredients

12 cups cauliflower florets

1/4 cup olive oil

Kosher salt and pepper to taste

2 cups shredded gruyere cheese, divided

1/2 cup grated parmesan cheese, divided

1/4 teaspoon grated nutmeg

1 teaspoon garlic paste or finely chopped garlic

1/2 cup heavy cream

1 egg, beaten

1/4 cup toasted panko bread crumbs (See Note)

Chopped parsley for garnish (optional)

Instructions

Preheat the oven to 425 degrees.

Toss the cauliflower florets with the olive oil and season generously with salt and pepper. Place in a single layer on a baking sheet and roast for 15 minutes. Remove the cauliflower from the oven and toss, then continue cooking for another 15-20 minutes until soft.

Using a food processor or potato masher, mash the roasted cauliflower until most of the pieces are broken down with some larger pieces still remaining.

Add the mashed cauliflower to a bowl along with the 1 1/2 cups of the gruyere, 1/4 cup of the parmesan cheese, nutmeg, garlic paste and cream. Taste the mixture for seasoning and add more salt and pepper to taste if needed. After tasting and adjusting the seasonings you can stir in the egg.

Pour into an 9″ x 9″ baking dish and top with the breadcrumbs, the remaining 1/2 cup gruyere and 1/4 parmesan cheese.

Bake at 400 for 35 minutes until warmed through.

Recipe Notes

To toast the breadcrumbs, add them to a dry skillet and cook over medium-low heat, tossing often until browned.

If you’re looking to lower the carb count even more, reduce the breadcrumbs to 2 tablespoons or omit them from the recipe completely.
