An Easy Sweet Potato Casserole Recipe – With a Bourbon Twist!

Thanksgiving is one of those holidays that totally revolves around food. So having make ahead side dish recipes like this Bourbon Sweet Potato Casserole in your back pocket are key!

This recipe can be completely made ahead of time and stashed in your refrigerator until it’s time for baking. Bring the casserole out about 30 minutes before you put it in the oven and bake per the recipe instructions.

What I love most about this sweet potato casserole is the marshmallow topping. The marshmallows toast while the casserole is baking, just like if you were sitting by a campfire.

So you have a super buttery, brown sugar mashed sweet potato inside, with toasty marshmallows combined with crunch from pecans on top. It’s side dish perfection!

How to Make A Sweet Potato Casserole

Start out by boiling the sweet potatoes until they are fork tender. Make sure they are pretty soft before you drain them, it will make mashing them a lot easier.

Once you mash the sweet potatoes, add softened butter, brown sugar, chopped pecans and a few seasonings. Mix that together and pour it into a 9″ x 13″ baking dish.

Top the sweet potato casserole with mini marshmallows and chopped or whole pecans and bake. This is one of those recipes that looks so delicious and impressive, but really takes just a few minutes to make.

Can You Leave Out The Bourbon In This Recipe?

Yes you can! Adding bourbon to these sweet potatoes just enhances the flavor a little, it’s not going to add enough alcohol to the recipe to make it off limits for the kids. But if you don’t want to add the bourbon just omit it from the recipe, it’s still going to be amazing!

What Other Nuts Can I Use In This Sweet Potato Casserole?

Walnuts, Slivered Almonds, macadamia nuts and even toasted hazelnuts would be delicious! Pecans are a traditional ingredient in sweet potato casserole so we stuck with tradition for our recipe.

Also, if you’re a nut free house you can leave the nuts completely out of this recipe! The nuts add a really nu=ice flavor and give the casserole texture, but it will still be super tasty without any nuts at all!

Description

This Bourbon Sweet Potato Casserole is a favorite Thanksgiving side dish! Buttery mashed sweet potatoes sweetened with brown sugar and a splash of bourbon! It’s a fancy – but easy! – twist on the classic sweet potatoes with marshmallows side dish.


Ingredients

4 pounds sweet potatoes, peeled and cut into large cubes

1 stick butter, room temperature

2 teaspoons vanilla extract

2 tablespoons bourbon (optional)

1/2 cup brown sugar

1/2 teaspoon cinnamon

1/2 teaspoon kosher salt

1 1/2 cup chopped pecans, divided (1/2 cup for topping)

2 cups mini marshmallows


Instructions

Preheat the oven to 375 degrees.

Place the sweet potatoes in a large pot of water, filling the water a couple of inches over the tops of the potatoes. Add 2 tablespoons of kosher salt to the water and bring to a boil. Boil the potatoes for 15 minutes until they are fork tender and drain.

Add the potatoes to a large bowl and mash with a potato masher until you get a smooth consistency.

Add the butter, vanilla, bourbon, brown sugar, cinnamon, salt and 1 cup of the chopped pecans to the bowl and stir to combine with the potatoes.

Pour the sweet potatoes into a buttered, 9″ x 13″ (2 quart) casserole dish and top with the marshmallows and the remaining 1/2 cup of pecans.

Bake for 25 minutes until the center is hot and the marshmallows have browned. If the marshmallows are getting to brown on top and the casserole isn’t warm yet, spray a piece of aluminum foil with cooking spray and cover the casserole dish until warmed through.
