This delicious and healthy side dish is so full of flavor! Roasted cauliflower is so easy to make, we make it all the time!
2 large heads of cauliflower, cut into florets
1/4 cup olive oil
2 teaspoons kosher salt
Fresh black pepper to taste
1/4 teaspoon fresh grated nutmeg
1/4 cup grated parmesan cheese, divided
Preheat the oven to 450 degrees.
Add the cauliflower to a baking sheet and toss with the olive oil, salt, pepper, nutmeg and 2 tablespoon of the parmesan cheese.
Roast for 20 minutes, then remove the sheet pan from the oven and toss the cauliflower. Return the sheet pan back to the oven and roast for another 20-25 minutes.
Add the remaining 2 tablespoons of parmesan cheese to the cauliflower and serve.
