This Parmesan Roasted Cauliflower is a delicious and healthy side dish that’s full of flavor!

Ingredients
- 2 large heads of cauliflower, cut into florets
- 1/4 cup olive oil
- 2 teaspoons kosher salt
- Fresh black pepper to taste
- 1/4 teaspoon fresh grated nutmeg (optional)
- 1/4 cup grated parmesan cheese, divided
Instructions
- Preheat the oven to 450 degrees.
- Add the cauliflower to a baking sheet and toss with the olive oil, salt, pepper, nutmeg and 2 tablespoon of the parmesan cheese.
- Roast for 20 minutes, then remove the sheet pan from the oven and toss the cauliflower. Return the sheet pan back to the oven and roast for another 20-25 minutes.
- Add the remaining 2 tablespoons of parmesan cheese to the cauliflower and serve.
