  • Fresh Thyme: While we’re definitely not opposed to using dried herbs, fresh thyme is so much more flavorful than dried. It makes a huge difference in flavor!
  • A Splash of Wine: A splash of white wine helps adds a delicious flavor to the pan sauce, and the sauce is what it’s all about.
  • Size of the Chicken: You don’t want to have really giant chicken breasts for this recipe, we looking for tender, evenly cooked chicken. If the chicken breasts is too big, slice it in half horizontally first.

  • Boneless, Skinless Chicken Breast: Try not to buy those extra large chicken breasts for this recipe. A medium sized breast is what we’re looking for, otherwise for a larger size, slice the chicken in half horizontally.
  • Fresh Garlic: We do urge you to use fresh garlic for the sauce for the best flavor. Second option would be to use garlic paste in a tube and lastly, from the jar.
  • Sun Dried Tomatoes: Use sun dried tomatoes packed in oil because you’ll be using a bit of the oil in the sauce.
  • Flour: To help thicken the sauce, but make sure to cook the flour out for 1 minute after adding.
  • White Wine: A dry as opposed to sweet white wine. Something that you like to drink.
  • Chicken Broth: Or chicken stock, bone broth works well too.
  • Fresh Thyme: Fresh thyme really adds a much better flavor than dried but if dried is all you have, use 1 teaspoon.
  • Dried Oregano: Dried oregano is actually preferred, fresh oregano has a very strong flavor that would overpower this chicken dish.
  • Parmesan Cheese: Grab a block and grate it yourself or get a good quality grated cheese. The kind from the can really doesn’t have a lot of good, nutty flavor.
  • Heavy Cream: Heavy cream is preferred to half and half because it will make the sauce smooth, creamy and thick.
  • Fresh Basil: Fresh basil is also a must for marry me chicken, dried basil just doesn’t have the same flavor effect for this recipe.

How To Make Marry Me Chicken

  • Sear the Chicken: Season the chicken breasts on both sides with salt and pepper. Add oil and butter to a skillet and sear the chicken on both sides until a brown crust forms. 4-5 minutes per side. Transfer to a plate and cover to keep warm.

  • Make the Sauce: Add a tablespoon of oil from the sun dried tomatoes to the skillet. Add the garlic and sun dried tomatoes and cook for 1 minute. Sprinkle the flour into the pan and cook the flour out for 1 minute. Pour in wine to deglaze the pan, scraping the bottom of the pan to get up all the brown bits. Pour in the chicken broth, whisk the sauce to combine and bring the sauce to a simmer to thicken. Once thickened, pour in the heavy cream and parmesan cheese, whisking to combine.

  • Add Chicken Back to the Sauce and Simmer: Add the thyme, salt, pepper and oregano to the sauce and stir. Place the chicken breasts back into the pan and simmer for 5-7 minutes. Sprinkle the fresh basil over the chicken and into the sauce and serve.

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 pounds boneless, skinless chicken breast (sliced in half horizontally if the breasts are very thick)
  • 1 tablespoon chopped garlic
  • 1/3 cup chopped sun dried tomatoes (save some oil from the jar)
  • 2 tablespoons flour
  • 1/3 cup white wine
  • 1 cup chicken broth
  • 1 tablespoon chopped fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon dried oregano
  • Fresh ground black pepper to taste
  • 1/3 cup grated parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons fresh sliced basil (plus more for garnish)

Instructions

  1. Season the chicken breasts on both sides with salt and pepper. Add oil and butter to a large skillet over medium heat. Sear the chicken on both sides until a brown crust forms, about 4-5 minutes per side. Transfer to a plate and cover to keep warm.
  2. Add 1 tablespoon of oil from the sun dried tomatoes to the skillet. (If you don’t have the oil, just add another tablespoon of olive oil or butter) Add the garlic and sun dried tomatoes and cook for 1 minute. Sprinkle the flour into the pan and stir. Cook the flour out for 1 minute, then pour in the wine to deglaze the pan. Scrape the bottom of the pan to get up all the brown bits and let the wine reduce for 1 minute.
  3. Pour in the chicken broth, whisk the sauce to combine and bring the sauce to a simmer to thicken. Once thickened, pour in the heavy cream and parmesan cheese, whisking to combine.
  4. Add the thyme, salt, pepper and oregano to the sauce and stir. Place the chicken breasts back into the pan (with any juices from the plate) and turn to coat the chicken breasts in the sauce. Simmer for 5-7 minutes. Sprinkle the fresh basil over the chicken and into the sauce.
  5. Serve the chicken with plenty of the sauce spooned over the top. We also like serving the chicken over a bed of pasta or rice.

Recipe Notes

Storage: Store leftover chicken in an air tight container in the refrigerator for up to 3 days.

Reheat: Reheat leftovers in the microwave until just warmed through. The oven will work as well, but don’t leave it in the oven too long or too high a temperature (350 is best) or the cream sauce will break.
