- Easy To Make: While there is about 35-45 minutes of roasting time, getting these potatoes into the oven couldn’t be easier.

Recipe Ingredients

- Potatoes: You can use small red or yellow potatoes or russet potatoes, whatever you have on hand.
- Olive oil: Doesn’t have to be extra virgin, just a good quality olive oil since there’s a 1/4 cup in this recipe.
- Ranch Seasoning: You can buy this in 1 ounce packets or in a larger container if you plan on making a lot. Which you will.
- Butter: For drizzling on top of the potatoes after roasting.
- Salt & Pepper: Optional but recommended, so we didn’t show it in the photo above. Taste a potato after roasting and see if the flavor is right for you, add salt and pepper if needed.
How To Make

- Dice & Season: Dice 2 1/2 pounds of potatoes (skin on) into a 1/2 inch small dice. Season with ranch seasoning and olive oil. Toss and place onto a baking sheet.
- Roast: Roast the potatoes in a 425 degree oven for 35-40 minutes, tossing in between cooking. Drizzle with melted butter and serve immediately.
Tips For Best Results
Although this is a super simple side dish recipe, we do have a few tips to ensure the best results!
- Grease the baking sheet: Make sure to grease your baking sheet before adding the potatoes. Use a non-stick cooking spray or brush with a layer of oil.
- Toss for even roasting: Halfway through the cooking time, get in there and toss the potatoes so that they roast up crispy on all sides.
- Same size dice: Try to roughly cut the potatoes into the same size so that they cook evenly.

Store leftovers in an air tight container in the refrigerator for up to 5 days. Reheating the potatoes can be as easy as throwing a bowl in the microwave for a quick bite.
But for the crispiest results, reheat the potatoes in a 400 degree oven until warmed through, about 7-8 minutes. Or place into an air fryer on 375 for 5 minutes.

Ingredients
- 2 1/2 pounds potatoes cut into small dice, skin on (can use small red or yellow potatoes or russet potatoes)
- 1/4 cup olive oil (doesn’t have to be extra virgin)
- 1 ounce packet of Ranch seasoning
- 4 tablespoons butter, melted
- Kosher salt and fresh black pepper to taste (optional but recommended)
Instructions
- Preheat the oven to 425 degrees.
- Wash and dry the potatoes, then cut into a 1/2 inch dice and place into a large bowl. Pour in the olive oil and then sprinkle on the ranch seasoning. Toss until well coated.
- Spray a large 9″ x 13″ baking sheet with non-stick cooking spray, or brush with a thin layer of olive oil. Place the potatoes onto the baking sheet spreading into an even layer. If the potatoes don’t have room to be in a single layer on your baking sheet, use two baking sheets.
- Place into the oven for 35-40 minutes, tossing once in between cooking time. While the potatoes are in the oven, melt the butter in a small dish.
- When the potatoes are brown and crispy, remove the sheet pan from the oven. Taste to see if salt and pepper are needed, then drizzle with the melted butter. Serve immediately.
