Marry Me Chicken

Marry Me Chicken is a chicken recipe that’s so good, you may get a proposal! Tender chicken breasts in a creamy, sun dried tomato sauce with parmesan cheese and fresh basil.

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 pounds boneless, skinless chicken breast (sliced in half horizontally if the breasts are very thick)
  • 1 tablespoon chopped garlic
  • 1/3 cup chopped sun dried tomatoes (save some oil from the jar)
  • 2 tablespoons flour
  • 1/3 cup white wine
  • 1 cup chicken broth
  • 1 tablespoon chopped fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon dried oregano
  • Fresh ground black pepper to taste
  • 1/3 cup grated parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons fresh sliced basil (plus more for garnish)

Instructions

  1. Season the chicken breasts on both sides with salt and pepper. Add oil and butter to a large skillet over medium heat. Sear the chicken on both sides until a brown crust forms, about 4-5 minutes per side. Transfer to a plate and cover to keep warm.
  2. Add 1 tablespoon of oil from the sun dried tomatoes to the skillet. (If you don’t have the oil, just add another tablespoon of olive oil or butter) Add the garlic and sun dried tomatoes and cook for 1 minute. Sprinkle the flour into the pan and stir. Cook the flour out for 1 minute, then pour in the wine to deglaze the pan. Scrape the bottom of the pan to get up all the brown bits and let the wine reduce for 1 minute.
  3. Pour in the chicken broth, whisk the sauce to combine and bring the sauce to a simmer to thicken. Once thickened, pour in the heavy cream and parmesan cheese, whisking to combine.
  4. Add the thyme, salt, pepper and oregano to the sauce and stir. Place the chicken breasts back into the pan (with any juices from the plate) and turn to coat the chicken breasts in the sauce. Simmer for 5-7 minutes. Sprinkle the fresh basil over the chicken and into the sauce.
  5. Serve the chicken with plenty of the sauce spooned over the top. We also like serving the chicken over a bed of pasta or rice.

Recipe Notes

Storage: Store leftover chicken in an air tight container in the refrigerator for up to 3 days.

Reheat: Reheat leftovers in the microwave until just warmed through. The oven will work as well, but don’t leave it in the oven too long or too high a temperature (350 is best) or the cream sauce will break.
