Who doesn’t love easy appetizer recipes like beer cheese dip? We love trying different kinds of beer and different combinations of cheese. Maybe a Corona and a pepper jack for a cinco de mayo party? Or a German beer with some gouda or Swiss cheese for an Octoberfest? You get the idea.
- Easy to make: This cheese dip only take about 5 minutes to put together. Keep it warm in a small slow cooker all night.
- Fun for parties: Set out a bunch of dippers for your guests! Vegetables (broccoli is a favorite) or soft baked pretzels, potato chips or tortilla chips…the options are endless.

How To Make
Just a few easy steps and you’ll be ready to start dipping!

- Make a roux: Add butter to a medium pot and let melt. Sprinkle in flour and whisk to combine, then let cook for one minute. Add salt, garlic powder and paprika and whisk.

- Pour in beer and milk then add cheese: Pour in beer a little at a time, whisking in between. Next pour in milk, slowly while whisking. Let the liquid come to a bubble, then add shredded cheese in batches.

- Simmer and serve: Bring the cheese sauce to a simmer for 2-3 minutes. Taste for seasonings and serve.
How Do You Keep Beer Cheese Warm?
Usually this dip doesn’t last long enough for cooling down and congealing to become a problem. But if it is a concern, you can transfer the dip to a small slow cooker, or just keep most of the dip in the pot over the lowest heat on your stove.
You can serve the beer cheese in a smaller bowl to your guests and keep the rest of it warm until the bowl needs to be refilled.

Best Dippers For Beer Cheese Sauce
You can have some fun when serving this beer cheese sauce by adding tons of different dippers. Of course the standards are what everyone will go for, but a few different ideas are always fun!
- Pretzels: A classic dipper for beer cheese is a warm, soft pretzel. We buy them frozen and pop them into the oven right before serving. Hard pretzels are delicious, too!
- Chips: Anything from a thick cut potato chip to a tortilla chip or Fritos are always good.
- Crackers: Any type of cracker or pita chip will be delicious in this cheese dip. We love using a cracker with everything bagel seasoning for a salty bite.
- Vegetables: Broccoli and cauliflower, carrots sticks, pea pods, really anything that you like. Try blanched asparagus for a fancy twist!
- Not a dipper: Not a dipper but we also use this beer cheese dip as a sauce for sandwiches like pulled pork or our family favorite meatloaf sandwich.

What Kind of Cheese is Best?
This is where you can get a little creative. You can stick to an all cheddar cheese dip, or switch it up a bit! Use 2 cups of cheddar and a cup of Swiss or gouda for a sweeter, nuttier vibe. Or try using a cup of pepper jack for a little bit of spice.
We like adding a few slices of American cheese to make this beer cheese dip extra smooth and creamy. You can also add in a few slices or cubes of Velveeta cheese for the same feel.

This easy Beer Cheese Dip is always a favorite! We love it for dipping with pretzels, chips or vegetables or even drizzling on sandwiches.
Ingredients
- 3 tablespoons butter
- 3 tablespoons flour
- 1/2 cup beer (any kind you like drinking, we typically use a lighter flavored beer like a lager)
- 1 cup whole milk
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon kosher salt (more to taste if needed)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 3 cups shredded cheddar cheese
- 2 slices American cheese (optional, makes it a bit smoother)
Instructions
- Add the butter to a medium pot. Once melted, sprinkle in the flour while whisking to make a roux. Let the roux cook for 1 minute, then slowly pour in the beer while whisking. Next add the milk, again slowly pouring while whisking. Bring the liquid to a simmer.
- Season with Worcestershire sauce, salt, garlic powder and paprika, whisking to combine. Bring the cheese to a simmer and let cook for 2 minutes.
- Turn the heat to the lowest setting, then start adding the cheese a handful at a time, whisking until smooth. Tear the American cheese into pieces (if using) and whisk until smooth.
- Taste for seasonings and adjust if needed. Serve immediately.
Recipe Notes
Store: Store leftovers in an air tight container in the refrigerator for up to 5 days.
Reheat: Reheat the dip in the microwave or (for larger portions) in a pot on the stove over low heat, stirring often, until warmed through. Overheating will cause the cheese sauce to break and get oily, so heat gently and only until just warmed through.
