This easy Beer Cheese Dip is always a favorite! We love it for dipping with pretzels, chips or vegetables or even drizzling on sandwiches.

- 3 tablespoons butter
- 3 tablespoons flour
- 1/2 cup beer (any kind you like drinking, we typically use a lighter flavored beer like a lager)
- 1 cup whole milk
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon kosher salt (more to taste if needed)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 3 cups shredded cheddar cheese
- 2 slices American cheese (optional, makes it a bit smoother)
Instructions
- Add the butter to a medium pot. Once melted, sprinkle in the flour while whisking to make a roux. Let the roux cook for 1 minute, then slowly pour in the beer while whisking. Next add the milk, again slowly pouring while whisking. Bring the liquid to a simmer.
- Season with Worcestershire sauce, salt, garlic powder and paprika, whisking to combine. Bring the cheese to a simmer and let cook for 2 minutes.
- Turn the heat to the lowest setting, then start adding the cheese a handful at a time, whisking until smooth. Tear the American cheese into pieces (if using) and whisk until smooth.
- Taste for seasonings and adjust if needed. Serve immediately.
Recipe Notes
Store: Store leftovers in an air tight container in the refrigerator for up to 5 days.
Reheat: Reheat the dip in the microwave or (for larger portions) in a pot on the stove over low heat, stirring often, until warmed through. Overheating will cause the cheese sauce to break and get oily, so heat gently and only until just warmed through.
