How To Make
These microwave scrambled eggs couldn’t be easier to make. All you need is two ingredients (for the base, add more if you like!) and a few seconds in the microwave.

- Add two eggs and two tablespoons of mayonnaise to a bowl along with salt and pepper to taste. Whisk together for 60 seconds until the mixture is pale and slightly frothy.

- Pour the egg mixture into a buttered ramekin (or you can use non-stick cooking spray) and microwave for 80 seconds until the eggs are cooked through.

- Check to make sure there’s no uncooked egg left in the bottom of the dish, if there is, microwave the eggs for another 5-10 seconds until the eggs are set. Add chives, scallions, parmesan cheese or just finish with a crack of black pepper.
What You Can Add To These Scrambled Eggs
Pretty much anything that you add to regular scrambled eggs. You can add ingredients to these eggs before cooking or add fresh ingredients to the top of the eggs after coming out of the microwave – or both. But honestly, these eggs are delicious with just salt and pepper!
Before Microwaving:
- Protein: Bacon, sausage (chicken sausage, Italian sausage or pork sausage) diced ham.
- Cheese: Cheddar, American, mozzarella, gouda, parmesan or Swiss for starters.
- Cooked vegetables: Mushrooms, broccoli, spinach, bell peppers and onions.
After Microwaving:
- Avocado or a scoop of guacamole
- Diced tomatoes
- Fresh herbs like chives, parsley or basil
- Crumbled feta cheese
- Salsa or pico de gallo

Ingredients
- 2 large eggs
- 2 tablespoons mayonnaise (or try cottage cheese or plain Greek yogurt for more protein!)
- Pinch of salt and black pepper
Instructions
- Add the eggs and mayonnaise into a bowl along with a pinch of salt and a few cracks of black pepper. Whisk together vigorously for 60 seconds until frothy.
- Spray an 8 ounce ramekin with non-stick cooking spray (you can also use softened butter). Pour the egg mixture into the ramekin (use a spatula to make you get all of the egg mixture out from the bowl).
- Microwave for 1 minute and 20 seconds (80 seconds). Check to see if there’s any uncooked egg left (any liquid still in the bottom of the ramekin) and microwave for 5-10 more seconds if needed. Once the eggs are set, add toppings if you like or serve as is.
