If you’re looking for the easiest way to make scrambled eggs look no further! These Microwave Scrambled Eggs turn out so light and fluffy, with an incredible flavor. Add in sausage, bacon or ham if you like or enjoy as is.
Ingredients

- 2 large eggs
- 2 tablespoons mayonnaise (or try cottage cheese or plain Greek yogurt for more protein!)
- Pinch of salt and black pepper
Instructions
- Add the eggs and mayonnaise into a bowl along with a pinch of salt and a few cracks of black pepper. Whisk together vigorously for 60 seconds until frothy.
- Spray an 8 ounce ramekin with non-stick cooking spray (you can also use softened butter). Pour the egg mixture into the ramekin (use a spatula to make you get all of the egg mixture out from the bowl).
- Microwave for 1 minute and 20 seconds (80 seconds). Check to see if there’s any uncooked egg left (any liquid still in the bottom of the ramekin) and microwave for 5-10 more seconds if needed. Once the eggs are set, add toppings if you like or serve as is.
