We’re starting with out perfect chicken cutlet recipe as the base for these sandwiches, stacked with fresh mozzarella, roasted red peppers, fresh basil and a drizzle of balsamic glaze. Of course we added a good slather of mayonnaise to the bottom bun, just for extra flavor!

- Balsamic Glaze (not balsamic vinegar, balsamic glaze which is thicker and sweeter)
- Ciabatta Rolls
- Mayonnaise
Variations For These Italian Chicken Sandwiches
We think this combination of ingredients and flavors is pretty perfect, but there are many other ways to make these sandwiches! Here’s a few ideas to switch things up a little!
- Pork or turkey cutlets instead of chicken
- Marinated, grilled chicken instead of breaded cutlets
- Different rolls like sub rolls, sourdough, kaiser or poppy seed
- Different cheese like provolone or gorgonzola or melted mozzarella
- Fresh tomatoes
- Pickled vegetables (giardiniere)
- Pepperoncini or banana peppers for spiciness
Can You Make These Chicken Sandwiches In Advance?
You can make the chicken cutlets ahead of time and them warm them up on a sheet pan in the oven right before assembling your sandwiches. Everything else for these tasty Italian sandwiches are already ready to go!
When the fresh mozzarella hits the warm chicken cutlets, it’ll start to melt just a little but not all the way. It’s literally the most perfect sandwich recipe out there. I haven’t found anyone yet that doesn’t love them!
One thing that I’ve learned when serving these Italian Chicken Ciabatta Sandwiches is to go ahead and assemble them before serving. Because there’s always that person that says they don’t want this ingredient or that ingredient and they don’t know what they’re talking about.

This Italian Chicken Ciabatta Sandwich is perfect for game day, holidays, tailgating or just dinner at home! Crispy chicken cutlets with creamy mozzarella, roasted red peppers and fresh basil!
Ingredients
- Flat Chicken (Chicken Cutlets)
- 16 ounces fresh mozzarella
- Fresh basil leaves
- 15 ounce jar of roasted red peppers, drained and dried off with paper towels
- Balsamic glaze (store bought)
- Mayonnaise
- 4 ciabatta rolls
Instructions
- Once your chicken cutlets are made, you can start assembling the sandwiches. (See Note*) Spread a good amount (to your linking, we like a couple of tablespoons) of mayonnaise on the bottom of each ciabatta roll.
- Cut the chicken cutlets to fit on the rolls and add two layers of cutlets to each sandwich. Top with a couple of slices of fresh mozzarella, a couple of roasted red peppers, and a few fresh basil leaves.
- Drizzle the top of the sandwich with balsamic glaze, add the top bun and serve.
Recipe Notes
Use warm chicken cutlets to make these sandwiches. If you’ve made them ahead of time, warm them back up on a sheet pan in a 400 degree oven.
