Slow Cooker Root Beer Chicken Recipe

Not only is this Slow Cooker Root Beer Chicken easy to make, but our whole family just loves it! That’s a dinner time win, my friends, when everyone loves what’s being served. Leftovers are amazing, even better I think, and this shredded chicken freezes beautifully.

Anything else you ask? Well, yes. This crock pot chicken also serves a crowd, so if you’re having a party or planning a holiday this is the dinner recipe you need. Make it ahead of time and then just warm it up when you’re ready. That’s all folks.

How Do You Make Root Beer Chicken?

All you need to do is grab a couple of pounds of boneless, skinless chicken breast (yep, you can use chicken thighs, too) and place them in a 6-8 quart slow cooker.  Season the chicken with salt, pepper, garlic powder and dry mustard and then pour on the sauce.

The sauce is a mixture of root beer and root beer barbecue sauce. Just two ingredients is all you need! Do try and find root beer bbq sauce if you can, it’s pretty widely available in most stores and many brands carry it. Using a root beer barbecue sauce just drives home that delicious, root beer flavor in this chicken recipe.

Remove the chicken from the slow cooker after 4-5 hours when it’s fork tender. Shred the chicken into pieces about the size you see above and place the chicken back into your crock pot.

Stir the chicken into the sauce and cook on high for 30-60 minutes with the slow cooker uncovered. This will help to thicken the sauce and infuse the root beer bbq flavor into the chicken.

Can You Make This Chicken Recipe Ahead Of Time?

Yes!!! And please do because we think it tastes even better. You can make the whole recipe a day or two ahead of time, let it cool and then refrigerate it until you’re ready. Individual portions can be reheated in the microwave, or you can reheat it back up in your slow cooker.

Another option is to place the chicken in a dutch oven or an oven proof dish and reheat it at 350 until warmed through.

And yet another option is to make this slow cooker chicken ahead of time and freeze it! Meal prepping is so easy with this bbq chicken, you can even double the recipe and portion it our for many different meals.

This Root Beer Chicken Isn’t Just For Buns!

Of course we love serving this chicken on soft, potato or brioche buns but it’s also a delicious ingredient for many different recipes. Try using this chicken for burritos or tacos, adding it to your favorite BBQ Chicken Pizza Recipe, or using it as  topping for nachos.

Quesadillas, chicken bowls, or stuffed into a baked potato…the possibilities are endless!

Slow Cooker Root Beer Chicken

Ingredients

  • 2 1/2 pounds boneless, skinless chicken breast (can also use chicken thighs)
  • 1 teaspoon kosher salt
  • Fresh black pepper to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dry mustard
  • 1 cup root beer
  • 1 cup root beer barbecue sauce (if you can’t find root beer flavor, regular will work too)

Instructions

  1. Spray the inside of a 6-8 quart slow cooker with non-stick cooking spray. Season the chicken breasts with the salt, pepper, garlic powder and dry mustard and place into the slow cooker.
  2. Whisk the root beer and barbecue sauce together in a bowl and then pour over the chicken breasts.
  3. Cook on low for 4-5 hours or on high for 2-3 hours. Check to make sure the chicken is fork tender and then remove the chicken from the slow cooker. Shred chicken and then place back into slow cooker, mixing together with the sauce.
  4. Cook the chicken on high, uncovered, for 30-60 minutes to thicken the sauce and infuse the flavors of the sauce into the chicken.
