Piña Colada Shrimp Kabobs are the ultimate party food dinner! We’re marinating this shrimp in a real piña colada marinade, then grilling them on kabobs with sweet pineapple and vegetables. If you’re looking for a fun dinner that everyone will want the recipe for, this is the one to make!

Why You’ll Love These Shrimp Kabobs

If you like Piña Coladas then we’re pretty sure you’re going to love these shrimp kabobs! We know you’re going to ask – is there really rum in the marinade? The answer is yes, there is rum in this marinade and actually a pretty good amount. That being said, if boozy food isn’t for you, you can leave the rum out if you prefer.

The shrimp turn out super sweet and juicy from the marinade, this is definitely one of our favorite ways to grill shrimp. Then we combined it with sweet red onion and bell peppers with another pop of flavor from pineapple. It’s all you need in a fun and tasty dinner, whether it’s for a date night at home or a BBQ in the backyard.

How To Make

An easy to make marinade, some chopped up vegetables and you’re on your way to the grill! Make the marinade by coming rum and store bought piña colada mix in a bowl. We like to marinate the shrimp for four hours to really get a nice flavor.

Once the shrimp has been marinated, start threading it onto wooden or metal skewers along with bell peppers, pineapple and onions. All of these ingredients will take about the same time to cook on the grill which makes this a perfect grilled kabob recipe.

You do have to grill these shrimp kabobs over medium-low heat or the sugar in the mix will burn. But if you grill them on nice, low heat all the sugar will caramelize and make these boozy shrimp kabobs taste even better.

When they come off the grill we like to top them with some toasted coconut. You can buy already toasted coconut or toast some unsweetened coconut in a dry skillet.

And then of course, you can pair these kabobs with a delicious piña colada or a fun Mai Tai to really keep in a tropical theme! If you’re really in the party mode you can make our popular Double Trouble Tropical Tequila Shots, too. Those are definitely going to keep the party going.

What To Serve With Shrimp Kabobs

We like serving these kabobs with our Cilantro Lime Rice, but there are so many other options. You can go with another vegetable side, but since there’s already veggies on these shrimp kabobs we usually go another route. If it’s a party, we’re usually making our BBQ Potato Salad and there’s usually a crock pot going with some loaded Cowboy Beans.

Since the grill is already on you can throw some corn on the cob on there, too. Yes, we know that’s another vegetable but who doesn’t love corn on the cob at a cook out?

Piña Colada Shrimp Kabobs Recipe

Piña Colada Shrimp Kabobs are the ultimate summer dinner! Juicy shrimp with a real piña colada flavor grilled with pineapple, sweet red onion and bell peppers.

Ingredients

  • 2 cups piña colada mix
  • 3/4 cup white rum
  • 1/4 cup dark rum
  • 2 pounds medium shrimp, peeled and deveined
  • 2 large red bell peppers, cut into 2 inch pieces
  • 1 fresh pineapple, cut into spears and then 2 inch pieces, you might not use it all (see note)
  • 1 large red onion, cut into wedges then 2 inch pieces
  • Toasted coconut for garnish

Instructions

  1. Mix the white and dark rum together in a bowl, then pour into a plastic bag or a glass bowl with the shrimp. Marinate for 4 hours in the refrigerator.
  2. Drain the marinade and dry the shrimp with paper towels. Thread the shrimp onto skewers alternating with the peppers, onions and pineapple.
  3. Grill over medium-low heat, for 8-10 minutes, turning in between cooking.
  4. Remove from the grill and garnish with toasted coconut.

Recipe Notes

Fresh pineapple is typically more firm, so it works better on the grill. You can buy one already cut up but we do recommend using fresh as opposed to canned.

Store: To store leftovers, remove the shrimp and vegetables from the skewers and place in an air tight container in the refrigerator for up to 3 days.

Reheat: Reheat leftovers in the microwave until just warmed through, overheating will cause the shrimp to become tough.
