Grilled Pesto Shrimp Kabobs

These Grilled Shrimp Kabobs are an easy way to get a healthy dinner on the table. The trick to this shrimp recipe is to marinate the shrimp for just about 30 minutes before hitting the grill.

Then, once the shrimp are hot off the grill, we’re going to drizzle them with a fresh, cool basil pesto.

I mean, how good does that sound? If you want to save even more time, grab your favorite jar of pesto from the store. But we promise this pest recipe is so easy, you’re going to have it on repeat.

How To Make Grilled Shrimp Kabobs

Start with a marinade made from lemon juice, olive oil and crushed fennel seeds. Marinate the shrimp for 30 minutes – and that’s all. You don’t want the acidity from the lemon juice to start cooking the shrimp.

While the shrimp is marinating, make the basil pesto by adding fresh basil, garlic and lemon juice to a blender. While the blender is running, slowly drizzle in a cup of extra virgin olive oil. Add salt and pepper to taste.

Now it’s time to drain the marinade from the shrimp and thread them onto skewers. Pat the shrimp dry with paper towels so that the oil doesn’t cause the grill flare up.

grill the shrimp for 2-3 minutes per side until firm and pink. When ready, remove the shrimp from the grill to a platter.

Now is the fun part. Drizzle the homemade basil pesto on top of the warm shrimp for the most delicious shrimp dinner of your life.

What Kind Of Shrimp Works Best For The Grill?

Any shrimp will really work, but since we’re putting these shrimp on the grill you’ll want to buy larger shrimp that won’t fall through the grates.

A medium to large count shrimp will be fine. Look for shrimp that’s already peeled and deveined to make the process easier.

  • 1 pound medium-medium/large shrimp, peeled and deveined
  • 2 lemons, thinly sliced

For the Marinade:

  • 1 1/2 teaspoon fennel seed, lightly crushed (use a rolling pin in a plastic bag)
  • 1 1/2 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/3 cup olive oil
  • 3 tablespoon fresh lemon juice

For the Basil Pesto

  • 2 cups fresh basil leaves
  • 2 garlic cloves, roughly chopped
  • 1/4 cup fresh lemon juice
  • 1 cup extra virgin olive oil
  • 1/4 teaspoon kosher salt


  1. Place the ingredients for the marinade in a glass dish or resealable plastic bag. Toss to combine and refrigerate for 30 minutes.
  2. Add all the ingredients for the basil pesto to a blender (except the olive oil) and pulse a few times. While the blender is running, slowly pour in the olive oil. Add the salt and taste for seasoning.
  3. Preheat the grill to a medium high heat, about 400 degrees. Remove the shrimp from the marinade and pat dry with paper towels. Thread the shrimp onto skewers, alternating with a lemon slice.
  4. Spray the grill with cooking spray or olive oil and then grill the shrimp for 3 minutes on each side until the shrimp is firm and pink.
  5. Serve the shrimp warm with the basil pesto drizzled over the top and fresh lemon wedges.
