Piña Colada Shrimp Kabobs are the ultimate summer dinner! Juicy shrimp with a real piña colada flavor grilled with pineapple, sweet red onion and bell peppers.
Ingredients
- 2 cups piña colada mix
- 1/3 cup white rum
- 2 pounds medium shrimp, peeled and deveined
- 2 large red bell peppers, cut into 2 inch pieces
- 1 large red onion, cut into wedges then 2 inch pieces
- 1 fresh pineapple, cut into spears and then 2 inch pieces, (you might not use it all, see note)
- Toasted coconut for garnish
Instructions
- Mix the piña colada mix and rum together in a bowl. Add the shrimp, toss to coat well and then cover with plastic wrap. Marinate for 2-4 hours in the refrigerator, don’t go too much longer or the shrimp will get mushy.
- While the shrimp is marinating, add the peppers and onions to a large skillet with olive oil Cook for 2-3 minutes, just to soften the vegetables slightly, and then remove to a board or a large bowl to cool. (see note)
- Drain the marinade and dry the shrimp with paper towels. Thread the shrimp onto skewers alternating with the peppers, onions and pineapple.
- Grill over medium-low heat, for 8-10 minutes, turning in between cooking.
- Remove from the grill and garnish with toasted coconut.
Recipe Notes
We cook the peppers and onions just a few minutes ahead of time because shrimp only takes 3-4 minutes to cook on the grill and the vegetables take a little longer. Cooking the vegetables ahead of time this way allows everything to be done at the same time. You can cook the vegetables way ahead of time, too, and just keep them in the refrigerator until you’re ready.
Store: To store leftovers, remove the shrimp and vegetables from the skewers (or keep them on if you have room in your refrigerator) and place in an air tight container in the refrigerator for up to 3 days.
Reheat: Reheat leftovers in the microwave until just warmed through, overheating will cause the shrimp to become tough. You can also reheat the shrimp and veggies in a skillet, or back on the grill for a couple of minutes until warmed through.
