Ingredients You’ll Need

These are all the ingredients you’ll need to make a chopped Italian sub, minus the rolls. See below the photo for a list of ingredients with descriptions and substitutions if applicable. For a complete list of ingredients head to the recipe card at the end of the post.

  • Deli Turkey, Ham & Salami: You can switch up the deli meats here if you like. Instead of salami you can use pepperoni or other Italian meats. Try smoked turkey or ham for other flavor options.
  • Provolone cheese: We like using the classic provolone cheese because of it’s flavor, also it’s a sturdier cheese so it won’t get mushy in the filling.
  • Banana peppers: Just a mild spice, but you can also use other pickled peppers like pepperoncini, too, just depends on how spicy you like it.
  • Cherry tomatoes: Or a regular tomato, whatever the ripest, sweetest option that you have is.
  • Iceberg lettuce: You can swap out a crispy Romaine, but iceberg lettuce is sturdy and will hold up to the filling.
  • Mayonnaise: Full fat, regular mayo will give the best flavor.
  • Red wine vinegar: The classic sub vinegar, but you can also use white wine or champagne vinegar if you’re out.
  • Italian Seasoning: Out of Italian seasoning? Use dried oregano and basil, or just one or the other.

  • Chop the ingredients: Chop the deli meats, tomatoes, lettuce and peppers and add them to a large bowl.
HOW BIG OR SMALL SHOULD I DICE THE MEAT AND CHEESE?

How big or how small you chop up the deli meat and cheese is up to you. Some recipes call for a very small dice, almost paste-like and we don’t prefer that. We like a fairly small dice so the ingredients blend together but still have texture. Refer to the pictures in the post for examples.

  • Make Dressing: Mix the mayonnaise, red wine vinegar, Italian seasoning, salt, pepper and a splash of juice from the peppers in a bowl.

  • Mix: Pour the dressing over the chopped ingredients and mix until combined.

How To Serve A Chopped Italian Sub

Pile the filling onto sub rolls and serve. That’s it! This recipe is so easy, which is why we love making it for parties. We do like to stuff a decent of the filling into our sub rolls…so don’t be shy.

If you’re making the sub filling ahead of time, leave out the lettuce and add that right before serving so the lettuce doesn’t wilt. Like we said before, iceberg is a sturdy lettuce but we want it as crunchy as it can be.

Of course chips are perfect for serving, but you can also try a hot side like Baked Steak Fries or our super popular Loaded Baked Beans. For cold side options, this Ranch Potato Salad or a classic Creamy Coleslaw always works great!

Ingredients

  • 1 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • Fresh ground black pepper to taste
  • 12 teaspoons juice from peppers (optional)
  • 1 pound turkey, diced
  • 1 pound ham, diced
  • 1/2 pound salami, diced
  • 1/2 pound provolone cheese, diced
  • 12 ounce jar sliced banana peppers
  • 2 cups diced cherry tomatoes
  • 2 cups shredded iceberg lettuce (plus more for serving if desired)

Instructions

  1. Add the mayonnaise, red wine vinegar, Italian seasoning, salt, pepper and juice from the peppers (if using) to a bowl. Whisk to combine and set aside.
  2. Add the diced turkey, ham, salami, peppers, tomatoes and lettuce to a large bowl and toss together to combine. Pour in the dressing and toss until well combined.
  3. Serve on sub rolls with more shredded lettuce if desired.

Recipe Notes

What Size Roll? We used 6 inch sub rolls and stuffed them pretty full with the filling. It’s about 1 1/2 cups of the filling per roll to get 8 large sub sandwiches. You can easily half this recipe or use the filling for a few days to make more sandwiches, wraps or use by itself in a bowl with chopped lettuce.

Storage Tip: If you’re planning on leftovers or are making this in advance, don’t add the lettuce. Instead, stir the lettuce into the filling as you serve the sandwiches, or add a layer of shredded lettuce to the top or bottom of the sub roll and then add the filling. The filling will stay good as long as your deli meat is fresh. So try to make this recipe the day that you purchase your deli meat (if you’re planning on leftovers) so you get a full 3-4 days.
