Recipe Notes
What Size Roll? We used 6 inch sub rolls and stuffed them pretty full with the filling. It’s about 1 1/2 cups of the filling per roll to get 8 large sub sandwiches. You can easily half this recipe or use the filling for a few days to make more sandwiches, wraps or use by itself in a bowl with chopped lettuce.
How Big Of A Dice? How big or how small you chop up the deli meat and cheese is up to you. Some recipes call for a very small dice – almost paste-like and we don’t prefer that. We like a fairly small dice so the ingredients blend together but still have texture. Refer to the pictures in the post for examples.
Storage Tip: If you’re planning on leftovers or are making this in advance, don’t add the lettuce. Instead, stir the lettuce into the filling as you serve the sandwiches, or add a layer of shredded lettuce to the top or bottom of the sub roll and then add the filling. The filling will stay good as long as your deli meat is fresh. So try to make this recipe the day that you purchase your deli meat (if you’re planning on leftovers) so you get a full 3-4 days.
