A No Bake Dessert Recipe For Holidays

This year St. Patrick’s Day falls on a Saturday, so I think the parties are going to be on a much larger scale. More people coming out to celebrate, more food and of course, more drinks.

Green beer and all the whiskey are making appearances at bars everywhere this weekend and I plan on heading out to get a least a couple for myself at some point, but for the most part we’ll be home cooking something fun for dinner with the boys.

I’m thinking this year we’re going to go for our Irish Carnitas, the boys LOVE this unique corned beef dinner and I have to admit, so do I. It’s definitely the best way to eat corned beef in my opinion, covered with a boozy glaze and finished in the oven.

We make these Boozy Chocolate Chip Cookie Dough Sandwiches two ways, some with whiskey and some without. We don’t want to leave our kids when it comes to dessert!

Is Cookie Dough Edible?

We’re using an edible cookie dough recipe for the filling in these chocolate chip cookie sandwiches so that means there’s no egg. Most of us growing up (and even now) will still grab a spoonful or two of cookie dough when making cookies but if you’re going to eat a lot of it, a no egg cookie dough is the way to go.

You can buy your favorite store bought chocolate chip cookies for these Boozy Chocolate Chip Cookie Dough Sandwiches or make your own, but for this recipe I think store bought is fine.

Like I said before, you can absolutely scoop out part of this cookie dough for the kids, too before you add the booze in here. Because we’re talking about a boozy cookie dough that you can actually taste the boozy part of here…

How Do You Make Edible Cookie Dough?

All you need is a stick of butter, sugar, vanilla. flour and chocolate chips. Stir it together with green food coloring (let’s keep it festive here people) and then you’re ready to add the booze.

I’m using Crown Royal Vanilla Whiskey because, well, I love it. And I think the vanilla flavor to this whiskey goes really well in this cookie dough.

Mix in a couple of shots and then start making your Boozy Chocolate Chip Cookie Dough Sandwiches. It’s really that easy.

Boozy Chocolate Chip Cookie Dough Sandwiches

Ingredients

  • 24 medium sized chocolate chip cookies
  • 1 stick of butter at room temperature
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1 cup chocolate chips
  • 6 drops green food coloring
  • 2 tablespoons milk
  • 2 ounces vanilla whiskey

Instructions

  1. In a medium bowl, cream together the butter and both sugars. Pour in the milk, whiskey and food coloring and stir to combine. Add the flour and mix, then stir in the chocolate chips.
  2. Add some of the cookie dough to the flat side of a chocolate chip cookie. Place another cookie on top to make a sandwich, then repeat with the remaining cookies to make 12 sandwiches.
