Sausage Breakfast Casserole

This casserole recipe is one of our new favorites! SO easy to make, no pie crust involved, just a scoop of all purpose baking mix to give you that “crust” type feel. This recipe is perfect for holiday brunches and easy enough for every day breakfast or lazy Sunday mornings.

With only about 10 minutes of prep time and about 25 minutes in the oven, this sausage breakfast casserole can be on your constant breakfast recipe rotation!

How To Make A Breakfast Casserole

  1. Brown pork sausage in a large skillet, draining any drippings if needed. Add the sausage to a 9″ x 13″ baking dish.
  2. Add a layer of grated cheddar cheese, and shredded parmesan cheese on top of the sausage, followed by chopped scallions.
  3. Whisk eggs together with whole milk in a large bowl and then slowly add in 1 cup of all purpose baking mix (like Bisquick®). Pour this mixture over the sausage and cheese.
  4. Bake at 400 degrees for 25 minutes, slice and serve.

What Can I Top This Breakfast Casserole With?

We like diced tomatoes and more chopped scallions for a crisp, fresh texture and flavor. But you can get creative and add all your favorite toppings too!

  • Sour Cream
  • Guacamole
  • Pickled Jalapeños
  • Chives
  • Chopped Black Olives
  • Salsa
  • Leave toppings off and bake with an extra layer of cheese

So like we said in the last option, if toppings aren’t your thing, or your kids’ thing, then you can add an extra layer of cheese to the casserole after it sets in the oven. Or just bake this recipe as is and serve. It’s delicious any way you slice it!

Can I Make This Breakfast Casserole Ahead Of Time?

You can make and cook this sausage casserole ahead of time and then reheat in the microwave or oven. Cut the casserole into squares and reheat in the microwave for about a minute, then top with desired toppings.

To reheat the whole casserole, cover with foil and heat in a 350 degree oven for 20-25 minutes until warmed through.

What Kind Of Sausage Is Best For This Casserole Recipe?

Pork sausage is our go to for this sausage casserole, but you can use Italian sausage, spicy chicken sausage or turkey sausage too! I like the ease of using those pork sausage rolls because it breaks up very easily in the skillet when you cook it and surprisingly there’s very little grease.

If you’re using a sausage that produces more drippings or grease, just drain them from the skillet before adding the sausage to your casserole dish. Ground beef is also an option but won’t add as much flavor as sausage will to this recipe.

To really save some time, you can buy sausage crumbles that are already cooked and just add them right to the casserole!

This Sausage Breakfast Casserole has become a family favorite! Delicious enough for a holiday brunch but easy enough for every day breakfasts!

Ingredients

  • 1 pound pork sausage (breakfast sausage or sausage roll)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded parmesan cheese
  • 1/2 cup chopped scallions (plus more for garnish)
  • 4 eggs
  • 2 cups whole milk
  • 1 cup all purpose baking mix (like Bisquick®)
  • Diced tomatoes and extra scallions for topping if desired

Instructions

  1. Preheat the oven to 400 degrees.
  2. Brown the sausage in a skillet and drain any drippings from the pan if needed. Add the sausage to a 9″ x 13″ baking dish that’s been sprayed with non-stick cooking spray.
  3. Add the cheddar, parmesan cheese and scallions on top of the sausage layer.
  4. In a bowl, whisk together the milk and eggs. Slowly add the baking mix and whisk until smooth, making sure to get out as many lumps from the baking mix as you can.
  5. Pour the egg and milk mixture over the sausage and cheese, distributing evenly in the baking dish. Bake for 25 minutes and then remove from the oven and let cool slightly before slicing.
  6. Garnish with chopped tomatoes, scallions if desired.

Recipe Notes

Swap out spicy sausage if you want to kick up the heat!

This casserole recipe will keep, covered in the refrigerator for 3-4 days.

To reheat leftovers, cut the casserole into squares and heat in the microwave for about a minute, then top with desired toppings.
