All you need to make this fun dessert martini are a few classic fall flavored ingredients and some liquor cabinet staples!

  • RumChata: A creamy, cinnamon spiced rum liquor that can be used in many different cocktail recipes.
  • Pumpkin Puree: Unsweetened pumpkin puree, not pumpkin pie filling.
  • Vanilla Vodka: Vanilla vodka adds another layer of dessert-like flavor to this martini. You can use regular vodka instead and add more vanilla extract.
  • Cream: Heavy cream adds flavor and a creamy texture to this drink. Don’t swap out half and half or milk or the martini won’t be as thick and creamy. We’re looking for a melted ice cream texture here.

This Pumpkin Pie Martini hits all the fall vibes! Creamy, pumpkin spiced and a little bit boozy. Serve for a fun fall happy hour or as a dessert cocktail!

Ingredients

  • 6 ounces RumChata
  • 2 ounces vanilla vodka
  • 2 tablespoons pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 2 ounces heavy cream
  • 4 graham crackers, crushed
  • Corn syrup (for rimming the glasses)
  • Fresh nutmeg, cinnamon or pumpkin pie spice for garnish (optional)

Instructions

To Rim The Glass:

  1. Pour a small amount of corn syrup on a shallow plate in an even layer. Add the graham cracker crumbs to another shallow plate.
  2. Dip the edge of a martini glass in the corn syrup and the in the graham cracker crumbs. Repeat with the second martini glass.

To Make The Martini:

  1. Add the RumChata, vodka, pumpkin puree, vanilla extract and heavy cream to a cocktail shaker along with a few ice cubes.
  2. Shake until the martini is frothy and cold, then divide between the two martini glasses.
  3. Add larger pieces of graham cracker crumbs to the top of the drink and sprinkle fresh nutmeg or cinnamon or pumpkin pie spice on top for garnish.
