Holiday’s call for champagne. We’ve definitely made a few champagne cocktails like this Sparkling Whiskey drink or our Champagne Sangria. But take a little RumChata and add it to some fresh whipped cream…and you’ve got yourself a champagne cocktail that everyone’s going to love!
Most people think of mimosas as a brunch drink, but we love these champagne cocktails so much that we serve them at any party!
How To Make A Creamsicle Mimosa
Pour some orange juice in the bottom of a champagne flute and then top that off with champagne or prosecco.
Now load it up with some RumChata whipped cream…And a nice orange twist for garnish.
You are going to have to play bartender with this one though, or give the job to someone who wants it while you’re cooking. But like I said they couldn’t be easier to make. And for a bonus – you can make the RumChata Cream ahead of time so it’s really all about the assembly when it’s time to party! Enjoy!

This delicious, RumChata Creamsicle Mimosa is always a hit at parties! Perfect for brunch, but a delicious, creamy cocktail for all occasions!
- 8 ounces orange juice
- Champagne for topping
- 1 cup heavy whipping cream
- 1/4 cup RumChata
- In a large bowl using an electric mixer, beat together the heavy cream with the RumChata until thick.
- Add 2 ounces of orange juice to each champagne flute and then top with champagne.
- Add a scoop of the Rumchata whipped cream to the top of each glass and serve.
- Stir the whipped cream into the cocktail while you sip!
