I am trying to get more salad into my life.
There’s actually a good amount of things that I’m still trying. Like I just had my first piece of Irish soda bread – ever. So what happened? I ended up going out and buying 4 more loves before it was gone at the store.
Because it was so good. I mean who knew.
I also have never eaten a peanut butter and jelly in my whole life. You heard me, never. Peanut butter sandwich, yes. Add jelly…nope. Never.
Who knows, that might be my new food revelation, but for now – it’s salad.
Christie and the boys love salad, my little guy loves salad so much he eats one almost every night with dinner. Really, if it were up to him he’d choose to just eat salad for dinner but we sneak in some dinner for him too.
But me, well, before the web site started, salad was not in my vocabulary.
I’m sure there’s some guys out there that can relate? Help me out if you can…
But to those guys who don’t eat salad (or maybe even some ladies too) try this Easy Creamy Salsa Dressing and see if it changes your mind.
The first salad that we made that I totally loved was our Homemade Creamy Caesar Dressing. I was eating Caesar Salad almost every day – I love it. Now I’m not going to say it’s low fat or anything…but if low carb is your game then you’re all set.
Or even salad for apps, I’m good with that too like these Antipasto Salad Kabobs, one of our oldies but goodies.
The dressing itself is really simple. In a blender add mayo, salsa, lime juice and zest, salt, pepper and cumin and blend away.
That’s all folks.

And don’t just save it for salads, drizzle it on a taco, use it as a dip for vegetables or even in a sandwich.
But really, try it on a salad. If I can do it, I promise you can too.
- 1 cup mayonnaise
- 1 cup salsa
- 2 teaspoons fresh lime juice
- 1 teaspoon lime zest
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon cumin
- Add all ingredients to a blender and blend until smooth.
