Low Carb Ricotta Vegetable Dip is an easy low carb recipe! We used thin sliced vegetables instead of chips but a toasted baguette slice would work too!
Low carb diet recipes seems to be the way to go these days, but we’re not a low carb house all the time so we always go back and forth.
And obviously our kids are carb lovers of all kinds so we’re still surrounded by all the tasty things they love to eat.
Making low carb snacks or appetizers like this Low Carb Ricotta Vegetable Dip doesn’t really make it feel like you’re sticking to some sort of diet at all, in fact this is something I would eat all the time.
Also, it’s a great way to get more vegetables in your day too!
Is Ricotta Cheese Low Carb?
Ricotta cheese is on the higher end of carbohydrates, but it still can be used in low carb recipes.
Use vegetables instead of chips like we’re doing in this dip recipe and make your other ingredients as low carb as possible.
So as you can see in our nutritional information for this dip it’s only going to cost you about 2 carbs per serving.
Combine this dip with our Italian Deli Roll Ups and make it a low carb party all around!
You can definitely serve this dip up with crackers or pita chips too, I like to keep the options open for everyone since not all your family and friends might be low carb dieting.
Today we’re just using vegetable chips, thinly sliced on a mandoline or cut carefully by hand if you don’t have one. Slicing with a mandoline creates more of a chip feel, so if you’re using a knife the thinner the better.
The rest…is easy.
Just mix everything together in a bowl and let it chill. That’s the important step here, just letting the flavors come together in the refrigerator.
And since you’re saving your carbs here, indulge in a glass of wine (or two) to really make it feel like a party!
