Crock Pot Buffalo Chicken Dip Recipe

There’s basically two different ways to make buffalo chicken dip. The slow cooker method like this Crock Pot Buffalo Chicken Dip or an oven baked Buffalo Chicken Dip.

Both produce very similar results, there’s not much difference in flavor, it’s just a matter of which method you’d like to use. Using a crock pot is nice because it helps the dip stay hot throughout the night, instead of trying to reheat the dip when it gets cold.

Usually our buffalo chicken dip doesn’t last long enough for it to get cold but I guess it depends on how many other appetizers you have out!

When we talk about this “lighter” buffalo chicken dip, we’re not really referring to calories or fat…more about he texture of the dip. Sometimes you’ll be eating buffalo chicken dip and afterwards you feel like you need to run a few laps because it’s so cheesy and delicious, but also heavy.

Heavy on flavor but also heavy in texture. Thick cheese, cream cheese and chicken all melted together, heavenly but heavy. So we added ricotta cheese to this hot dip to lighten up that heavy feeling, and we do kind of love it.

If you’re not a fan of ricotta cheese you can definitely use all cream cheese instead. NO need to run out just for that but if you can try it with ricotta, please do! We really think you’re going to love it.

What Can You Use For Dipping In Buffalo Chicken Dip?

Pretty much everything you can think to dip with. Tortilla chips, pita chips, pretzels, even cut up celery sticks and carrots sticks to keep it low carb.

Most types of crackers will be great, bagel chips, even thick cut potato chips, Fritos or Doritos. It’s a party, people. Don’t start counting the calories now…

Ingredients For This Crock Pot Buffalo Chicken Dip

  • Cooked chicken
  • Cream Cheese (and ricotta cheese for this recipe)
  • Cheddar Cheese
  • Mayonnaise
  • Ranch dressing
  • Buffalo wing sauce
  • BACON!!!

Any type of cooked chicken you have on hand will work, a rotisserie chicken is great for this recipe or you can bake a couple of chicken breasts and shred them.

We’ve taken the liberty of adding bacon to our buffalo chicken dip, because well, bacon. But bacon works really well in here, I’m actually surprised I don’t see more recipes out there that have bacon in them!

There’s usually some sort of cooked chicken on hand in the fridge, if our boys don’t get to it before we do, so even making this dip at the last minute usually isn’t a problem!

Can You Reheat This Dip?

Not so much…it’s kind of a gloppy mess after it’s been refrigerated. I don’t think you’ll have a problem going through this buffalo chicken dip, it’s usually a pretty big hit.

If you do, for some reason have a lot leftover just heat it up for a few seconds at a time in the microwave, stir and then a few more seconds. Heating it up in the oven will cause the cheese to break and get a little oily and that’s not good eats.

But since we hate throwing anything away, we have microwaved it in a pinch and it’s still really delicious.

One of the reasons I love this buffalo chicken dip recipe is because of how creamy and “dippable” it is. Adding ricotta cheese really lightens up the texture of this dip making your dipping even easier!

Nothing worse then diving into a cheesy, hot dip and having your chip break apart on you. Don’t be that guy, make this recipe instead and you’ll be dipping away like a champ.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1/2 cup mayonnaise
  • 1 cup ricotta cheese (part skim or whole milk)
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo wing sauce (or a mild hot sauce)
  • 2 cups shredded Mexican blend cheese, divided
  • 1/2 teaspoon kosher salt
  • black pepper to taste
  • 1/2 cup ranch dressing
  • 1/2 cup crumbled bacon or “real” bacon bits
  • Chopped scallions and extra bacon for garnish

Instructions

  1. Add the chicken, mayonnaise, ricotta cheese, cream cheese, buffalo wing sauce, 1 cup of the Mexican blend cheese, salt, pepper, ranch dressing and bacon to a bowl.
  2. Stir to combine the ingredients well then pour into a 2 quart crock pot or slow cooker.
  3. Top with the remaining cup of Mexican blend cheese and cook on low for 2-3 hours until the dip is warmed through and the cheese on top pis melted.
  4. Serve with tortilla chips, pita chips, pretzel chips and/or cut vegetables

    It is really good…but TRUE BUFFALO CHICKEN (Wings) is served with Bleu Cheese (NOT RANCH…yuck).
    Don’t ever go to Buffalo, NY and ask for ranch with your wings…you’ll get laughed at.
    I’m just kidding…but its true.
    The creamy bite of bleu cheese really compliments the flavor of the wing sauce.
    We cut the ranch and replaced with chunky bleu cheese and bleu cheese crumbles. FIXED.
    Fantastic base otherwise. I liked the addition of the ricotta. Wouldn’t have thought of that.
