A Healthy Soup Recipe Everyone Will Love

This Chicken and Broccoli Soup couldn’t be easier to make, and our boys flipped out over the flavor so that’s a win win for me. Of course we love ordering take out from our favorite Chinese restaurant, but sometimes we want a lighter option with ingredients that we can control and this soup is the perfect example of that!

By saving some extra calories and fat, we don’t feel bad about adding a few crunchy noodles on top of this soup, but if you want to leave them off that’s totally up to you!

Chicken and Broccoli Soup is also a great way to use up leftover chicken and/or vegetables that you might have laying around in the fridge. Just follow the proportions in this recipe and swap out what you have on hand.

How To Make Chicken and Broccoli Soup

Start out by cooking ground chicken with onions and garlic, then add in broccoli florets with beef broth and chicken broth to steam. Using a combination of beef and chicken broth gives the broth a more authentic taste, but you can use all of one or the other if you like.

If you want to keep the broccoli from wilting in the soup, you can also steam it separately and then add it to the soup at the end. Our boys like it when the broccoli is cooked in with the soup because it absorbs all the flavor of the broth and it’s also softer.

Now you can add the pasta – we used rotini but you can use any tube shape pasta or even ramen noodles would be great!

Now it’s just 15 minutes until soup time. Just let the pasta cook down in the broth and then it’s time to serve. If you like you can add these crispy wonton noodles to the top of your soup for garnish and a little crunch!

Can You Make This Soup Recipe Ahead Of Time?

Absolutely! The pasta will absorb some of the broth (which we don’t mind a bit) but if you don’t want too much broth to be soaked up you can cook the pasta separately and then add it to the soup when you’re ready to serve.

What Can I Substitute In This Soup?

If you don’t have ground chicken, you can use leftover, shredded chicken or grab a rotisserie chicken rom the store. Use ground beef for a beef and broccoli soup and even ground pork would be super tasty.

Mostly any kind of vegetable will work here, shredded carrots, frozen peas, corn, cabbage, bok choy. This soup is also a great way to clean out the refrigerator of any leftovers you might have. Leftover rice? Add it in instead of pasta!

I have to tell you, I’ve never seen my little guy gobble up broccoli the way he did when he ate this soup. And I guess I can go ahead and say the same for myself!

This healthy soup recipe is a family favorite! Lean ground chicken with broccoli and pasta in a light chicken broth gives you all the flavors of your favorite chicken and broccoli take out meal in a much healthier dinner!



  • 1 1/2 lbs. ground chicken
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 cup onion, diced
  • 2 garlic cloves, crushed
  • 4 cups broccoli florets
  • 1 1/2 cups beef broth
  • 3 1/2 cups chicken broth
  • 1/4 cup soy sauce
  • 1/2 teaspoon sesame oil
  • 1 teaspoon sriracha
  • 1 cup rotini pasta or any tube pasta of your choice


  1. Add oil to a large soup pot over medium heat. Add the ground chicken and salt and pepper. Brown the chicken, breaking up with a spoon until there is no longer any pink in the meat.
  2. Add the onion and garlic, stir to combine and cook for 5 minutes.
  3. Place the broccoli in the pot, pour int the beef broth and cover to steam for 5 minutes.
  4. Remove the cover and stir the broccoli together with the meat.
  5. Pour in the chicken broth, soy sauce, sesame oil and sriracha and stir.
  6. Add the pasta, stir, then cover and simmer for 15 minutes.Remove the lid, adjust the soup for seasoning and serve.

Recipe Notes

You can also steam the broccoli separately and add it to the soup when it’s finished cooking if you want the broccoli to be more firm.
