Ingredients You Need

The basic ingredients that you need to make these Buffalo Chicken Meatballs. Refer to the recipe card for amounts needed.

  • Ground Chicken: You can use the extra lean ground chicken or the lean ground chicken for these meatballs. We like the extra lean because the meatballs will come out a bit firmer.
  • Mozzarella Cheese: Part Skim or whole milk is fine. Like we mentioned you can switch up the cheese to any kind of melting cheese that you like!
  • Buffalo Wing Sauce: Not to be confused with hot sauce, buffalo wing sauce is a milder flavor than most hot sauce.
  • Breadcrumbs: Even though there are bread crumbs in these meatballs, there’s still only 1 carb per meatball!
  • Egg: An egg will help to bing the chicken together so the meatballs won’t fall apart.
  • Garlic Powder: To add a hint of garlic flavor without having any chunks or garlic in the meatballs.
  • Dried or Fresh Parsley: Fresh parsley is always a good option, but dried works well too if you don’t have fresh on hand.
  • Ranch or Blue Cheese Dressing: Whichever you prefer. If you opt for blue cheese, make sure that it’s smooth and not chunky.

How To Make

  • Add the ingredients for the meatballs into a large bowl and mix together until combined. Spray your hands with non-stick cooking spray and start forming the chicken mixture into balls that are a little smaller than a golf ball.
  • Bake the meatballs for 12-15 minutes until they are cooked through (chicken is cooked at 165 degrees) but just make sure that no pink remains. Let the meatballs cool for a couple of minutes, then drizzle with Buffalo wing sauce and Ranch or blue cheese dressing.

Can You Make These Meatballs Ahead Of Time?

Definitely. This easy chicken recipe only takes about 20 minutes from start to finish but if you want to make it ahead of time you can bake the meatballs in advance and then just warm them up right before serving.

You can also make the ground chicken mixture, shape the meatballs and chill. Then all you need to do is bake and serve! Either way, you’ll want to save the drizzle of sauce until right before serving.

These Buffalo Chicken Meatballs are always the first appetizer to go! A juicy, cheesy chicken meatball drizzled with Buffalo sauce and either Ranch or Blue Cheese dressing. So easy to make ahead of time, then warm and add the sauce before serving!

Ingredients

  • 1 pound ground chicken
  • 1/3 cup breadcrumbs (plain or seasoned)
  • 1/3 cup shredded mozzarella cheese
  • 1 egg, beaten
  • 1 tablespoon buffalo wing sauce
  • 1 1/2 teaspoons dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • Ranch or Blue Cheese Dressing and extra Buffalo Wings Sauce for serving

Instructions

  1. Preheat the oven to 400 degrees.
  2. Mix the ground chicken, bread crumbs, mozzarella, egg, buffalo wing sauce, parsley, salt, pepper and garlic powder together in a bowl.
  3. Form the meatballs using a 1 1/2 tablespoon scooper or your hands (a little smaller than a golf ball) Spray the scoop with cooking spray (or your hands) so that the chicken mixture doesn’t stick.
  4. Place the meatballs on a parchment lined baking sheet and bake for 12-15 minutes until the meatballs are firm and cooked through.
  5. Serve drizzled with Ranch or Blue Cheese dressing and Buffalo Wing sauce, or serve the sauce on the side for dipping.
