These Buffalo Chicken Meatballs are always the first appetizer to go! A juicy, cheesy chicken meatball drizzled with Buffalo sauce and either Ranch or Blue Cheese dressing. So easy to make ahead of time, then warm and add the sauce before serving!

- 1 pound ground chicken
- 1/3 cup breadcrumbs (plain or seasoned)
- 1/3 cup shredded mozzarella cheese
- 1 egg, beaten
- 1 tablespoon buffalo wing sauce
- 1 1/2 teaspoons dried parsley
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- Ranch or Blue Cheese Dressing and extra Buffalo Wings Sauce for serving
Instructions
- Preheat the oven to 400 degrees.
- Mix the ground chicken, bread crumbs, mozzarella, egg, buffalo wing sauce, parsley, salt, pepper and garlic powder together in a bowl.
- Form the meatballs using a 1 1/2 tablespoon scooper or your hands (a little smaller than a golf ball) Spray the scoop with cooking spray (or your hands) so that the chicken mixture doesn’t stick.
- Place the meatballs on a parchment lined baking sheet and bake for 12-15 minutes until the meatballs are firm and cooked through.
- Serve drizzled with Ranch or Blue Cheese dressing and Buffalo Wing sauce, or serve the sauce on the side for dipping.
Recipe Notes
This recipe makes approximately 24 meatballs, which would be about 4 meatballs per person.
