Ingredients

Instructions

  1. Preheat the broiler to high. Some broilers don’t have a heat setting but you’ll want the rack to be about 6 inches from the heating element.
  2. Spray a baking sheet with non-stick cooking spray, or line with non-stick aluminum foil.
  3. Season the chicken thighs all over with the All Purpose Seasoning and place on the baking sheet top side down. Place the chicken under the broiler for 5 minutes, then flip the chicken over and broil another 7 minutes. The chicken should register 165 degrees on a thermometer when cooked through.
  4. Remove the chicken to a platter or a board. Let the chicken rest for 5 minutes before serving. See note*

Recipe Notes

We typically dice these chicken thighs into large cubes to use for meal prep in rice bowls or salads. You can, of course, leave them whole for serving.

  • Flip and continue to broil: Flip the chicken over and place back under the broiler for another 7-8 minutes. You’re looking for caramelized edges and a crispy exterior. Use a thermometer to make sure the chicken registers 165 degrees.

  • Rest and serve: Let the chicken rest for 5 minutes and serve. We often chop up these chicken thighs for using in rice bowls or salads, but of course you can also serve them whole.

Uses For Chicken Thighs

This chicken is honestly so addicting, it’ll be tough to not gobble it up as it comes out of the oven. We often do that, or serve it with a vegetable side on a bed of rice, but here’s some other tasty ideas:

Can I Use Chicken Breasts Instead?

Chicken breasts can be broiled, but they won’t turn out as juicy as chicken thighs. If you do want to broil chicken breasts, just make sure they aren’t super thick, or you can slice a thick chicken breast in half horizontally.
