Fiesta Taco Casserole

This Fiesta Taco Casserole is an easy dinner idea the whole family will love! Loaded with seasoned ground beef, beans and cheese, it’s a dinner fiesta!

Taco night is always a favorite at our house! We love making fun Tex-Mex dinners like these Pan Fried Beef Tacos or a big batch of our Homemade Taco Meat for taco night!

An Easy Taco Casserole Recipe For Parties or a Fun Dinner at Home!

Everyone loves taco night, or Tex-Mex night, really anything to do with taco flavors – we’re loving it. This Fiesta Taco Casserole covers all the flavors that we crave in a cheese covered, melty beef casserole.

You can easily substitute or switch out the flavors in this recipe to you liking, maybe pinto beans instead of black beans or salsa instead of fresh pico de gallo. Add the flavors in here that you and your family likes and just follow the lead of the casserole recipe here.

We usually have taco beef already in the refrigerator waiting to be spooned onto chips or piked on nachos, or actually eaten in a taco. So the beef layer of this casserole is a no brainer for us. You can definitely swap our ground turkey or ground pork too if you don’t have ground beef on hand.

The fun part is when it’s time to get to eating. Scoop this casserole out onto plates and serve with actual forks and spoons if you like. Or serve it with tortilla chips and or Fritos instead of spoons…it’s a party!

How Do You Make A Taco Casserole?

Our taco casserole starts with a bottom layer of refried beans. These smooth, creamy beans make the perfect base for this taco casserole so spread it all out from edge to edge.

Next you’re going to add a layer of our seasoned taco meat, again spreading it out so that the layer is even. You want every bite to have all the flavors!

Now comes the pice de gallo, or fresh salsa layer and black beans. If you want to use a jar of regular salsa here that’s ok too but we love the fresh tomato and pepper flavor to cut the rich flavors of this dish.

And of course, we’re going to add a final layer of cheese. Lots of cheese.

Don’t be shy here, we’re not trying to cut calories with this taco casserole recipe. Use cheddar or Monterey Jack or Pepper Jack cheese, all would be delicious.

Finally you can put this casserole in the oven to bake. The cheese on top will melt and ooze into the layers in the most addicting way…just wait and see what happens when this baby comes out of the oven!

Avocados or guacamole would be perfect here too, and of course chips to go on the side or for scooping up this beefy casserole. Just add margaritas and beer and it’s time to fiesta!

Description

This taco flavored casserole is loaded with seasoned ground beef, beans and cheese! Add all the taco toppings and serve with chips on the side for a dinner fiesta!


Ingredients

1 recipe homemade Taco Meat (This recipe yields about 4 cups of taco meat)

16 ounce can refried beans

15.5 ounce can black beans, rinsed and drained

2 cups fresh pico de gallo, Ro-tel, or diced tomatoes, drained

2 cups shredded cheddar cheese

3.8 ounce can black olives, drained

Sour cream for garnish


Instructions

Preheat the oven to 400 degrees.

Spread the refried beans into the bottom of a 9″ x 13″ baking dish

Add the black beans on top of the beef, spreading out in an even layer.

Add the pico de gallo or salsa on top of the beans, then top with the shredded cheese.

Bake for 25 minutes until the cheese is melted and the casserole is warmed though.

Serve with sour cream, extra olives and extra pico de gallo or salsa.
