For this vegetarian stuffing recipe, we took our base sausage stuffing recipe…made a few changes and came up with this completely delicious stuffing that everyone is going to love.
This stuffing recipe has crunchy, toasted pecans, dried figs and sweet pears. Tossed together with sweet brioche bread…it’s literally bursting with flavor.
We always like to have an option at our Thanksgiving table for non-meat eaters, of course lots of vegetable sides are going to be fine. But who doesn’t want a scoop of stuffing with their dinner?

Talking about all the stuffing recipes here this week have really making our mouths water for Thanksgiving dinner. Besides the big bird, you might be cooking a ham or a lasagna too.
Does your family do that? Just make a turkey or cook like three different main courses because one just isn’t enough? My family usually does a turkey and a baked ham, but some years it’s a turkey and a lasagna or some sort of pasta dish.

Back to this Vegetarian Stuffing though. You can make some adjustments to this recipe really easily. You can swap out the dried figs for dried cranberries or raisins. Swap out the pears for granny smith apples, or swap out the pecans for walnuts or almonds.

Just follow the base recipe instructions here and make it how you like it! Then place a few pieces of butter on top of the stuffing before it goes into the oven to bake.

The Best Vegetarian Stuffing for your Thanksgiving dinner! This recipe has something for everyone, figs, pears with crunchy pecans make it extra satisfying and delicious.
Ingredients
- 24 ounces of sliced brioche bread, toasted and torn into pieces
- 4 tablespoons butter
- 1 cup diced pears
- 1 cup diced onions
- 1 cup diced celery
- 1 tablespoon fresh, chopped thyme
- 1 teaspoon poultry seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped parsley
- 1/2 cup dried figs, chopped
- 3 cups vegetable broth
- 3 eggs, beaten
- 2 tablespoons of heavy cream
- 1 cup chopped pecans, plus more for garnish
- Extra butter for buttering the dish and for the top of the stuffing
Instructions
- Preheat the oven to 350 degrees.
- Add the butter to a large skillet over medium heat. Once the butter is melted, onions and celery. Cook for 5 minutes until they have softened, then add the chopped pears.
- Cook for another 3-4 minutes, then add the poultry seasoning, salt, pepper, thyme and parsley. Stir in the dried figs, then pour in the vegetable broth.
- Bring to a simmer then cook for 10 minutes over low heat. Remove the skillet from the heat and let cool for 5 minutes.
- Place the brioche pieces into a large bowl and then pour the vegetable broth mixture on top, tossing gently to combine.
- Mix the beaten eggs together with the cream and add to the bowl, along with the chopped pecans and stir.
- Pour the stuffing into a buttered 9″ x 13″ casserole dish, cover with foil and bake for 30 minutes.
- Remove the foil, add a few pieces of butter on top of the stuffing and bake another 10 minutes uncovered to crisp up the top of the dressing.
- Garnish with fresh chopped parsley and serve.

Can I make this in advance? If so, do you advise baking the day before and reheating?
You can definitely make this ahead of time! I would advise to refrigerate before baking, then bring to room temperature for 20 minutes and then bake per the directions.
No mention of pecans in this Pecan, fig and pear stuffing. What quantity of pecans and halves or pieces???
