How To Trim Asparagus
Take the guesswork out of trimming asparagus with this simple trick! The ends of asparagus stalks can be very tough, so you want to remove them before roasting.
You don’t have to repeat this snapping method with every asparagus stalk, just one will do the job.
Grab an asparagus stalk with two hands, one closer towards the middle and another on the end. Snap the asparagus stalk so that it breaks naturally where the tough end is.
Now use that trimmed asparagus as a guide to trim the rest of the asparagus with a knife. Bunches of trimmed asparagus in just seconds!
How To Make
Just a few minutes is all you need to get this Balsamic Roasted Asparagus on the table. You can trim and prep the asparagus ahead of time and pop it into the oven right before dinner.
- Prepare and Roast: After trimming the asparagus, lay the stalks on a sheet pan and season with salt and pepper. Drizzle olive oil on top and roast in the oven at 425 degrees for 10-12 minutes. You want the asparagus to be tender but still just a bit crisp.
- Finish: After the asparagus comes out of the oven, sprinkle lots of good quality, shaved parmesan cheese on top and the drizzle with balsamic glaze.
How Do You Know When Asparagus Is Done?
The cooking time will depend on the size of your asparagus stalks. Really thick asparagus is obviously going to take longer to roast then thinner pieces.
About 12 minutes is a good time to start checking for doneness. Grab one, bite into it and see if it’s to your liking. You can always throw it in the oven for another few minutes and check again.
We like our asparagus cooked until just tender, but still crisp, but if you like yours cooked a little more, just add a few more minutes to the cooking time.
Variations
Besides balsamic glaze and parmesan cheese, there’s many different ways that you can flavor roasted asparagus. Try adding chopped walnuts or almonds, or brighten it up with fresh lemon zest.
Instead of parmesan cheese you can add mozzarella cheese on top, much like we do in this Asparagus Casserole. Instead of balsamic glaze try using a chili crunch oil for some heat, or a drizzle of Yum Yum Sauce, which is similar to a remoulade.

Ingredients
- 2 pounds asparagus (approximately 2 bunches) washed and trimmed
- 1/4 cup olive oil
- Kosher salt and fresh black pepper to taste
- 1/2 cup shaved parmesan cheese
- 1/4 cup balsamic glaze
Instructions
- Preheat the oven to 425 degrees.
- Place the asparagus on a baking sheet, in a single layer. Drizzle the olive oil over the asparagus, then season to taste with salt and pepper.
- Roast the asparagus in the oven for 10 minutes, toss and check for tenderness. If you want the asparagus more tender, place it back in the oven for another 2-3 minutes.
- Remove the asparagus from the oven and then drizzle with balsamic glaze. Sprinkle the parmesan cheese on top and serve immediately.
