Ingredients You’ll Need

  • Carrots with Stems: Using carrots with carrot tops is just for visual appearance. It does make the presentation nicer for holidays or parties. However, if you can’t find carrots with the greens or fronds on top, regular carrots will work fine.
  • Bacon: Regular sliced bacon, not thick sliced.
  • Maple Syrup: Real maple syrup.
  • Butter: Salted butter, melted.
  • Cayenne Pepper: Adds just a touch of spice, but also optional.

How To Make Bacon Wrapped Carrots

For this Bacon Wrapped Carrot recipe, we like to start with carrots that have the stems on, but it’s not totally necessary. This is just for appearance, not flavor in any way, so regular carrots will work just fine.

  • STEP 1 – Preheat the oven to 425 degrees. Wrap each carrot with a piece of bacon as tightly as possible and place seam side down on a baking sheet.
  • STEP 2 – Roast the carrots in the oven for 20 minutes and then remove to add the glaze. You can make the glaze while the carrots are in the oven and have it ready to go.

  • STEP 3 – Glaze the carrots generously with the maple glaze and place back into the oven for another 15 minutes. Remove the carrots from the oven and glaze once more, top with chopped parsley and serve.

Can You Make This Side Dish Recipe Ahead Of Time?

These bacon wrapped carrots are best eaten fresh from the oven, but you can peel and wrap the carrots with bacon ahead of time.

In addition, you can get the glaze ready to go so that all you need to do is roast the carrots in the oven and glaze them before serving.

Tips For Success

This carrot side dish is very easy to make, but we do have a few tips to make them turn out perfectly!

  • Don’t Buy Thick Sliced Bacon: Thick sliced bacon will take longer to become crispy in the oven. Regular sliced bacon will crisp up nicely at the same time that the carrots are done.
  • Look For Carrots That Aren’t Too Large: Sometimes you see those giant, thick, huge carrots…this is not the recipe for those. It’s totally fine if some carrots are thinner or smaller than others but if they are all approximately the same size they’ll cook at the same time.
  • Wrap The Bacon Tightly: Make sure that you tightly wrap the bacon around the carrots so when the bacon cooks it forms to the carrots and doesn’t fall off.

Ingredients

  • 2 pounds carrots, peeled and stems trimmed down, leaving a couple inches at the top
  • 1 pound of bacon (not thick sliced)
  • 1/4 cup pure maple syrup
  • 2 tablespoons butter, melted
  • 1/4 teaspoon cayenne pepper
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 425 degrees.
  2. Wrap each carrot with a piece of bacon as tightly as possible so that when it cooks the bacon forms to the carrots. Place the carrots, seam side down, on a baking sheet that’s been sprayed with cooking spray. Roast the carrots in the oven for 20 minutes.
  3. While the carrots are roasting you can make the glaze by adding the syrup, melted butter and cayenne pepper to a small bowl and whisking together.
  4. Remove the carrots from the oven and brush with the glaze. Place the carrots back into the oven for another 15 minutes until the bacon is crispy.
  5. Remove the carrots from the oven and glaze once more, top with chopped parsley and serve.

Recipe Notes

You might not use all of the bacon, you’ll need one piece per carrot.
