Easy Glazed and Roasted Carrots with Maple & Bacon
With Easter right around the corner we’re starting to think about our holiday dinner. Because that’s what really makes the holidays, right? Getting together with family and friends and eating. And drinking, of course, but mostly eating.
It’s the time when we make the classic recipes in our family cookbooks and the time when you want to break out something different to get the “oohs” and “aahs” from everyone.
You can definitely start off with something like this Spicy Mushroom Rice, or even these Fried Brussels Sprouts or you can try these Bacon Wrapped Maple Glazed Carrots. Or try all three, because these are the times that we make ALL the side dishes…
If you can find whole carrots with the stems still on it looks great for the presentation of these carrots, but if the stems aren’t there…don’t worry. They’ve got nothing to do with the flavor so don’t run around going crazy trying to find them.
Also roasting the carrots is key because it makes them super sweet so basically it doesn’t make you feel like you’re eating a vegetable at all. And then when you wrap those sweet carrots with salt, crispy bacon? Well that’s a carrot recipe for the books, my friends.
How to Make this Roasted Carrots Recipe
All you need to do to get these Bacon Wrapped Maple Glazed Carrots started is to peel the carrots, wrap them in bacon and get them in the oven. It really doesn’t get much easier!
While the carrots are roasting, make the maple glaze that you’ll use to baste the carrots. This glaze recipe will give the bacon an almost “candied” taste to it and I’m telling you guys, you’re going to go crazy for it.
About the carrots roast for about 20 minutes, pull them out and give them a nice coating of the glaze.
Then the carrots go back in the oven for another 15 minutes, and then pull them out and one glaze them one more time. We don’t turn these carrots over because we want the bacon to caramelize and get crispy.
The side that’s on the baking sheet has direct contact with the heat of the pan so that will crispy up deliciously.
Can You Make This Side Dish Recipe Ahead Of Time?
These bacon wrapped carrots are best eaten fresh from the oven, but you can peel and wrap the carrots with bacon ahead of time. Also, you can get the glaze ready to go so that all you need to do is roast the carrots in the oven and glaze them before serving.

Bacon Wrapped Maple Glazed Roasted Carrots are the perfect side dish for any meal! These carrots are wrapped in bacon and basted with a sweet and spicy glaze!
Ingredients
- 2 lbs. carrots, peeled and stems trimmed down, leaving a couple inches at the top
- 1 lb. bacon (you might have extra, just use what you need to wrap the carrots)
- 1/4 cup pure maple syrup
- 1/4 teaspoon cayenne pepper
- 2 tablespoons bourbon or whiskey
- Chopped parsley for garnish
Instructions
- Preheat the oven to 425 degrees.
- Wrap each carrots with a piece of bacon as tightly as possible so that when it cooks the bacon sticks to the carrots.
- Place on a baking sheet that’s been sprayed with cooking spray and roast in the oven for 20 minutes.
- While the carrots are roasting you can make the glaze by adding the syrup, cayenne pepper and whiskey to a small bowl and mixing together.
- Remove from the oven and glaze generously with the maple glaze and roast again for another 15 minutes.
- Remove the carrots from the oven and glaze once more, top with chopped parsley and serve.
