How To Make
Once you have the ingredients prepped, this Almond Chicken is on the table in about 15 minutes. We have step by step photos here, but for complete instructions head down to the recipe card.


- Cook the chicken: Dice chicken breasts into bite sized pieces and brown in a skillet with oil. Once the chicken is cooked through, remove to a plate and cover with foil to keep warm.
- Cook the vegetables: Add onions, bell peppers and mushrooms to the same skillet and cook until softened and the mushrooms begin to brown. Stir in chopped garlic.


- Return the chicken to the pan: Add the cooked chicken back to the skillet along with 1/2 cup of sliced almonds.
- Toss with stir fry sauce: Add stir fry sauce to the skillet and toss to combine.
How To Serve
Our favorite way to serve this almond chicken recipe is over rice. You can also serve it over ramen noodles or even just as it is. Or instead of rice, try using this Cauliflower Rice to pack in even more vegetables.

Can I Use Store Bought Stir Fry Sauce?
Our homemade stir fry sauce only takes minutes to put together and the flavor is really worth it. However, if you want to grab a bottle of stir fry sauce from the store you can certainly do that too.
Some bottled stir fry sauce can be really thick, so you might have to thin it out with a splash of water or chicken broth.

Storing and Reheating
Store this chicken stir fry in an air tight container in the refrigerator for up to 3 days. Reheating is as easy as placing a portion into the microwave until it’s warmed through. The vegetables in this dish are hearty, so they won’t get mushy upon reheating like some other vegetables can.

Almond Chicken Recipe

This Almond Chicken recipe is so easy to make and so good for you! Packed with tons of veggies and lean chicken, serve it over rice for a take out dinner at home!
Ingredients
- 1 – 2 tablespoons of olive oil
- 1 1/2 pounds chicken breast or thighs, cut into bite sized pieces
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- Black pepper to taste
- 2 cups diced bell peppers
- 1/2 cup diced onion
- 1 tablespoon garlic
- 1/2 – 3/4 cup stir fry sauce (see note)
- 10 ounces mushrooms, sliced
- 1/2 cup sliced almonds
Instructions
- Add the oil to a large skillet or wok over medium-high heat. Add the chicken in a single layer and season with salt, pepper and garlic powder. Let the chicken cook, without stirring for 3 minutes. Turn the chicken over to brown the other side for another 3 minutes and then remove the chicken from the pan and place into a bowl or plate, covered with foil.
- To the same skillet, add the peppers, onions and mushrooms. You can add a another tablespoon of oil to the skillet if needed. Cook the vegetables until softened, about 5 minutes, then stir in the garlic and cook 1 minute longer. (You can season the vegetables with a little salt and pepper if you like, but we like to wait until the end, taste and add more if needed)
- Add the chicken back to the skillet with any juices from the bowl along with the sliced almonds. Pour in the stir fry sauce, starting with 1/2 of a cup. Toss together to combine the ingredients and warm them through. Add more stir fry sauce if desired, or a splash of water or chicken broth to thin out the sauce if needed.
Recipe Notes
We urge you to try our homemade Stir Fry Sauce for this recipe, but you can also buy a bottle from the store. Some store bought sauces can be very thick, so you may have to thin it out with a little water or chicken broth.
If you’re using the “no cook” version of our stir fry sauce, make sure to whisk it well before measuring out the 1/2 cup for the stir fry.
