Almond Chicken Recipe

This Almond Chicken recipe is so easy to make and so good for you! Packed with tons of veggies and lean chicken, serve it over rice for a take out dinner at home!

Ingredients

  • 12 tablespoons of olive oil
  • 1 1/2 pounds chicken breast or thighs, cut into bite sized pieces
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • Black pepper to taste
  • 2 cups diced bell peppers
  • 1/2 cup diced onion
  • 1 tablespoon garlic
  • 1/23/4 cup stir fry sauce (see note)
  • 10 ounces mushrooms, sliced
  • 1/2 cup sliced almonds

Instructions

  1. Add the oil to a large skillet or wok over medium-high heat. Add the chicken in a single layer and season with salt, pepper and garlic powder. Let the chicken cook, without stirring for 3 minutes. Turn the chicken over to brown the other side for another 3 minutes and then remove the chicken from the pan and place into a bowl or plate, covered with foil.
  2. To the same skillet, add the peppers, onions and mushrooms. You can add a another tablespoon of oil to the skillet if needed. Cook the vegetables until softened, about 5 minutes, then stir in the garlic and cook 1 minute longer. (You can season the vegetables with a little salt and pepper if you like, but we like to wait until the end, taste and add more if needed)
  3. Add the chicken back to the skillet with any juices from the bowl along with the sliced almonds. Pour in the stir fry sauce, starting with 1/2 of a cup. Toss together to combine the ingredients and warm them through. Add more stir fry sauce if desired, or a splash of water or chicken broth to thin out the sauce if needed.

Recipe Notes

We urge you to try our homemade Stir Fry Sauce for this recipe, but you can also buy a bottle from the store. Some store bought sauces can be very thick, so you may have to thin it out with a little water or chicken broth.

If you’re using the “no cook” version of our stir fry sauce, make sure to whisk it well before measuring out the 1/2 cup for the stir fry.
