This RumChata Cherry Pie Martini tastes just like your favorite pie in cocktail form! All the fun flavors you’d expect a RumChata cocktail to have – with fresh cherries for garnish!
Summer time means lots of hanging out with friends outside and if you’re in my world of friends…that means lots of cocktails too!
Of course you’re going to have coolers full of beer and wine. Got to have that rosé if you’re anyone this summer…but I also like to throw in a signature cocktail after everyone has gotten tired of the beer and wine, and that’s where this RumChata Cherry Pie Martini comes in.
It’s smooth, boozy and if done right – totally refreshing on a hot summer day. Or night, however you’re party is going.
The key to this cocktail is shaking it like crazy with crushed ice. That way when you strain it out you get small pieces of ice floating in the drink along with all that RumChata…it really doesn’t get much more tasty than that.
You can rim the glasses ahead of time really quickly – just dip the rims in corn syrup then roll around in crushed graham cracker crumbs. You can buy the crumbs already crushed up at the store or you can just crush up a few graham crackers in a zip top bag. I know you’ve got some laying around from all those s’mores…
Then it’s time for the good stuff.
Add the RumChata to a cocktail shaker filled with crushed ice, then follow it up with the rest of the ingredients. We’ve got cherry and cake vodka going on in here.
Just the right flavors to make this martini taste like a drinkable pie.
Shake it up good, strain into a rimmed martini glass then garnish with a fresh cherry – or two.
You can serve these RumChata Cherry Pie Martinis on a tray with lots of fresh cherries all around for garnish – and for snacking on.
I would actually serve this martini up for a dessert cocktail with lots of fresh fruit on the side instead of dessert. Make the cocktail the dessert…there’s always room for RumChata.
Unless, of course you’d like to whip up a fresh cherry pie. That would be totally acceptable!
- 4 ounces RumChata
- ¾ ounce Cherry Vodka
- ¾ ounce Cake Vodka
- Graham cracked crumbs and corn syrup for rimming the glass
- Fresh cherries for garnish
- Pour some corn syrup to make a shallow layer on a small plate.
- Add the graham cracker crumbs to another small plate in an even layer.
- Dip the rim of the martini glass in the corn syrup to coat the rim, then roll the rim in the graham cracker crumbs to coat.
- Add the RumChata and both vodkas to a cocktail shaker filled with crushed ice.
- Strain into the rimmed martini glass and garnish with a fresh cherry.
