One thing I love about summer is all the cook outs and BBQ’s that take place. Warm weather makes us feel like socializing and having drinks outside, cranking up the grill and getting whatever meat we can ready for dinner.
Ok, I know there are plenty of things to put on the grill besides meat but that is what I go to first.
I’m down with it all.
Then you’ve got your standard barbecue sides – potato salad, cole slaw, Buddha’s Balked Beans…all classics.
But I’m kicking up sides today like you wouldn’t believe with this Devilish Buffalo Chicken Pasta Salad. It’s got everything you need in one bowl.
Devilish Buffalo Chicken Pasta Salad is also so loaded with flavors that it really could be a whole meal. So I’m torn between calling this a side dish or a main meal because both things work.
We’ve got chicken going on in here, bacon, celery, chopped hard boiled eggs, elbow macaroni….you’re going to need to get those guns working to stir this Devilish Buffalo Chicken Pasta Salad together.
There’s a LOT of food going on here.
Another great thing about this Devilish Buffalo Chicken Pasta Salad is that it feeds a million people.
That’s correct, a million.
It’s so hearty that if you’re serving it as a side dish you only need a couple of (big) scoops. And then you will probably go back for a couple of more…but my point is…it serves a lot.
So if you’re going to a BBQ and you need a side for a lot of people, this Devilish Buffalo Chicken Pasta Salad is the ticket.
Another great thing about this Devilish Buffalo Chicken Pasta Salad is that you can make it ALL ahead of time. Even stir up the sauce, just keep it separate until you’re ready to go then at the last minute stir it up and head out the door.
Obviously with a pasta salad like this one (or any pasta salad really) it’s going to taste the best when it’s first made. An hour or so in the fridge for the flavors to combine is good too, just give it a stir before serving.
But honestly, a day or two later this Devilish Buffalo Chicken Pasta Salad is still amazing. A little more on the drier side but still AMAZING.
If you like your food a little more on the “Devilish” side, you can throw in a few dashes of hot sauce too. The buffalo wing sauce I use is a mild one so that when you’re feeding a crowd you can make everyone happy.

If you’re feeling devilish.
1 pound elbow macaroni, cooked and rinsed with cold water
12 hard boiled eggs, chopped
2 cups diced celery
3 cups diced chicken
1 pound bacon, cooked and chopped
1 cup mayonnaise
1/2 cup mild buffalo wing sauce
1 1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon dijon mustard
fresh chopped parsley for garnish
Add the macaroni, eggs, celery, chicken and bacon to a large bowl.
Stir together to combine.
In a separate bowl, mix together the mayonnaise, buffalo wing sauce, salt, pepper and dijon mustard.
Pour the sauce over the pasta salad and stir to combine.
Cover and refrigerate for an hour, then toss again right before serving.
