This copycat Starbucks Pumpkin Cream Cold Brew is pretty spot on. Although we don’t use a vanilla syrup like they do, we think it tastes even better. I’m not a big fan of the flavor that those syrups add to my coffee drinks, we like to keep it real here.

Recipe Ingredients
Simple but quality ingredients will result in the best tasting iced coffee drink, just like you’d get at your local Starbucks.
- Cold Brew Coffee (Your favorite kind): For this coffee drink, we like using a dark, robust cold brew coffee that pairs wonderfully with the sweet pumpkin infused cream.
- Heavy Cream: You can also use half and half, but the cream won’t be as luxurious and thick. Still delicious, but heavy cream is our recommendation.
- Real Pumpkin Puree: Not pumpkin pie filling, real canned pumpkin.
- Real Maple Syrup: Not pancake syrup, real maple syrup. If you don’t want any sweetener you can also omit this ingredient.
- Pumpkin Pie Spice: Classic pumpkin pie spice for warmth and flavor, can also use cinnamon.
- Vanilla Extract: Real vanilla extract or vanilla bean paste.

How To Make
This delicious iced coffee drink only takes a couple of minutes to make. Save some time and make your cold brew ahead of time and keep it in the refrigerator so it’s ready when you are.
As you can see below, it only takes a few steps to make this Pumpkin Cream Cold Brew right in your own kitchen. Absolutely less expensive than ordering out and it actually tastes so much better homemade.

- Brew the coffee: If you haven’t made your cold brew coffee ahead of time, brew 16 ounces of cold brew coffee for this recipe. Alternately, you can brew regular coffee and let it cool in the refrigerator or chill it down with ice cubes.
- Make the cream: Add heavy cream, pumpkin puree, vanilla extract, maple syrup and pumpkin pie spice to a milk frother. You can also use a hand frother if you don’t have one like we do here.
- Assemble: Pour the coffee into a tall glass with ice. Add the desired amount of cream to the drink and stir. Top with pumpkin pie spice or cinnamon.
What Is Cold Brew Coffee?
Cold brew coffee is made by steeping grounds slowly in cold water. Regular coffee is brewed by exposing grounds quickly to hot water. The water temperatures bring out different notes in the coffee grounds, so both methods will produce a different coffee experience.
There are of course many brands of cold brew coffee that you can buy online or at the grocery store, making this coffee drink a cinch to make. If you’re a cold brew lover, this is a good way to go, you’re cold brew will be on hand for you whenever you want it.
You can also make this cold brew coffee drink with regular coffee that’s been chilled or iced down, even though it’s not a traditional “cold brew”, it’ll still be delicious.
Variations
This pumpkin cream cold brew is a favorite of ours when ordering coffee out, so this version is perfection to us. However, if you like to switch the flavors up, we have some ideas!
- Omit The Pumpkin: Love a good cold brew coffee with cream but don’t like pumpkin? Simply leave the pumpkin out of the cream. The pumpkin flavor is only in the cream layer, not the coffee.
- Use Flavored Cold Brew: This Starbucks copycat recipe uses regular dark, strong cold brew coffee. You can also use a flavored coffee like pumpkin, caramel or vanilla flavored.
- Different Spices: Try using ground cinnamon, cardamom or fresh nutmeg to top this coffee drink instead of pumpkin spice.
- Make It Boozy: If happy hour is on your mind, a shot of dark rum, kahlua or vodka would be delicious in this cold brew coffee drink. Even try a splash of RumChata in the cream layer!
Can I Make The Cream Ahead Of Time?
Yes. You can make the pumpkin cream ahead of time for this cold coffee drink. Just mix the ingredients together and store in an air tight container in the refrigerator. Froth the cream right before using. When we do this, we like to double or even triple the recipe so we always have it on hand.

Elevate your iced coffee drinks at home with our Pumpkin Cream Cold Brew! Real pumpkin mixed with cream and pumpkin spice, stirred into your favorite cold brew coffee right at home!
Ingredients
- 1 cup heavy cream
- 2 tablespoons pumpkin puree
- 1 tablespoon pure maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon pumpkin pie spice
- 16 ounces cold brew coffee
Instructions
- Add the cream, pumpkin puree, maple syrup, vanilla and pumpkin pie spice to a bowl and whisk to combine. Use a hand frother for 2-3 minutes until thick and frothy. Alternately, you can shake the cream in a container or mason jar if you don’t have a hand frother.
- Fill a tall, 16 ounce glass with ice. Pour in 6-8 ounces of coffee, leaving room for the cream. Pour about 1/4 – 1/3 cup of cream into the coffee depending on your taste. Stir and serve with pumpkin pie spice or cinnamon on top for garnish.
