Did you know that you can Freeze Corn On The Cob Without Blanching? It’s so easy to do and you’ll have fresh summer corn all year long! Many recipes will tell you that you need to blanch the corn first, but you really don’t have to. Just cut the corn kernels off the cobs and freeze. It’s that simple!
Of course you can serve fresh corn like this as a side dish to dinner but you can also use it in many different recipes. So much better than frozen corn from the store and much more affordable!
How To Freeze Fresh Corn
As easy as this process is to do, we’ll go over the basic steps here with a couple of photos. For complete instructions, head to the recipe card at the end of the post.
- Husk the corn: Start by getting as many ears of corn as you like. Remove the husks and silk from the corn and discard.
- Cut the kernels off the cobs: Place a corn cob in a large, deep bowl. Use a sharp knife to cut the kernels from the cobs, letting them fall into the bowl.
- Place corn in freezer bags: Spoon the corn kernels into freezer bags, write the date on the bags and freeze for up to 12 months.
Can I Freeze Whole Corn On The Cob?
Yes! If you don’t want to cut the kernels off of the cobs, you can freeze them whole. You can either remove the outer layer of the husks, leaving some intact or remove all the husks and silk.
Place the corn on the cob into freezer bags, removing all the air that you can, and freeze for up to 12 months. Then cook the corn as you normally would, boil it or put it in the microwave for 2 minutes per ear of corn.

Ingredients
- 6 ears of corn, husked and silk removed (or as many as you want!)
- Quart or gallon size freezer bags
Instructions
- Place the corn cob in a large, deep bowl. Use a sharp knife to run down the cob on all sides, removing the kernels. Discard the cobs or save them to use in chowder recipes.
- Spoon the corn kernels into freezer bags. You can use gallon size freezer bags or quart sized, we like to portion the corn into 2 cups servings to use as a side dish or for recipes. Freeze the corn for up to 12 months.
- To use the corn you can add it to soups and chowders right from frozen. To cook it in the microwave, place the corn into a bowl and cover with plastic wrap. A 2 cup portion will need about 2 minutes in the microwave.
