- Cooked Chicken: You can use any cooked chicken that you have, diced or shredded.
- Chickpeas: Drain and rinsed, but dry them off before adding to the chicken salad.
- Mayonnaise: We like full fat for the best flavor but you can use whatever you like or have on hand.
- Shredded Carrots: You can buy shredded carrots in the produce department, or grate them yourself. We like to grate the carrots ourselves for the best flavor.
- Celery: Diced celery adds a nice crunch and flavor. If you don’t have celery, or you don’t like it you can you can leave it out.
- Dijon Mustard: Dijon mustard has a smooth, creamy texture and a slightly tangy and spicy flavor. It goes perfectly in this chickpea chicken salad to cut through some of the rich flavors.
- Red Wine Vinegar: Adds another level of tanginess to the salad, you can also use white wine vinegar, even pickle brine.
How To Make
Just a couple of steps and this chickpea chicken salad is ready to serve. If you have the time, we recommend that you chill this ahead of time to let the flavors blend together.


- Make the dressing: Add mayonnaise, dijon mustard, red wine vinegar, salt and pepper to a bowl and whisk to combine.
- Mash the chickpeas: In another bowl, use a potato masher to mash the chickpeas to your desired consistency. You can make them completely smooth or keep some larger pieces for texture. You can even leave the chickpeas whole if you like.


- Add ingredients to a bowl and mix: Add the chicken, celery, carrots and mashed chickpeas to a large bowl. Pour in the dressing and mix until combined. Taste for seasonings and adjust if needed.
Variations
While we think this chickpea chicken salad is pretty perfect as is, there are tons of different ways to make it! This is one of those recipes that you can use to “clean out the fridge” if you have extra veggies laying around.
- Vegetable options: Add diced red onion, scallions or even diced radishes for a spicy bite.
- Instead of mayonnaise: While we think mayo is the best option for flavor, you can try using half Greek yogurt for even more protein. Yogurt will add a tangier flavor than mayonnaise, so it’s all what you like.
- Instead of red wine vinegar: You can use white wine vinegar, champagne vinegar or pickle brine. If you don’t have any of those, add a tablespoon of fresh lemon juice.
- Instead of chickpeas: Of course you could leave the chickpeas out, or you can add small white beans, diced avocado, halved grapes or craisins.

Tips For Making The Best Chickpea Chicken Salad
Since chicken is the main ingredient, you’ll want to make sure that you’re starting off with flavorful chicken. Any cooked chicken you have will work, you can even grab a rotisserie chicken.
Make sure to taste the dressing before adding it to the rest of the ingredients. You might want more seasonings or more tang from the vinegar, so make it taste the way you like it.
Definitely leave some time for the chicken salad to chill in the refrigerator if you can. The flavors will blend together as it chills and the flavor is much better. No time to wait? No worries, it’s delicious right out of the bowl.

Chickpea Chicken Salad is made with tender chicken, crunchy veggies and buttery chickpeas. A protein packed meal that’s ready in just minutes!
Ingredients
- 2 1/2 cups cooked, diced or shredded chicken
- 1 cup canned chickpeas, rinsed and drained
- 1/2 cup diced celery
- 1/2 cup shredded or grated carrots
- 1/2 cup mayonnaise
- 2 teaspoons dijon mustard
- 1 tablespoon red wine vinegar (can also use white wine vinegar or pickle brine)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Add the chickpeas to a large bowl and mash with a fork or a potato masher. We like to leave some bigger and smaller pieces, but take it to the consistency that you like. (see note)
- Add the chicken, celery and carrots to the bowl with the chickpeas and toss to combine.
- Add the mayonnaise, dijon mustard, red wine vinegar, salt and pepper to a small bowl and whisk to combine. Taste for seasonings and adjust if needed. Pour the dressing over the chicken salad and toss to combine. Taste the chicken salad again and adjust the seasonings if needed.
- Cover and refrigerate for at least 30 minutes before serving if time allows.
Recipe Notes
You can leave the chickpeas whole if you like the texture. If you’re trying to “hide” the chickpeas in this chicken salad, mash them completely and no one will know they’re in there!
Store: Store chicken salad in an air tight container for up to 4 days in the refrigerator. Keep in mind that the chicken salad is only as fresh as the chicken that you started with. For instance, if you start with chicken that is already 3 days old, the chicken salad is only good for another day or two at the most.Â
