- Oats & Spices: Add oats to a bowl along with ground cinnamon, brown sugar, baking powder, salt and ground nutmeg. Mix.

- Milk & Eggs: Add milk, 2 large beaten eggs, vanilla and melted, cooled butter to the bowl. Mix until blended.

- Apples & Bake: Add peeled, diced apples to the bottom of a baking dish. Pour the oat mixture over the apples and then smooth it out so that it’s even. Bake at 350 degrees for 35 minutes.

Yes, this baked apple oatmeal is definitely a make ahead recipe! Not only can you make this ahead of time, but you can even make it the night before.
You might need to add a few minutes to the baking time if coming straight from the refrigerator.

How To Serve
Serve this baked apple oatmeal warm from the oven, or warm it up in the microwave for a few seconds before eating. You can certainly eat it cold, but we find the flavors are best warm.
- Maple Syrup: Add a drizzle of real maple syrup to the top.
- Yogurt: We love thick, sweet Greek yogurt, but you can add whatever kind that you like.
- Peanut Butter or other Nut Butters: Add a few spoonfuls of peanut butter to a small bowl and microwave for a few seconds until it’s a little loose. Drizzle over the warm baked oatmeal.
- Berries: Blueberries, strawberries, raspberries are all good choices, but really any kind of fruit that you like.

Baked Apple Oatmeal is cozy make ahead breakfast loaded with warm cinnamon, brown sugar, sweet apples and hearty oats. Perfect for busy mornings or a lazy brunch, make it ahead of time, even the night before!
Ingredients
- 3 cups old fashioned oats
- 1 1/2 teaspoons baking powder
- 3 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon kosher salt
- 3/4 cup packed brown sugar
- 2 1/2 cups whole milk
- 2 large eggs, beaten
- 1 tablespoon vanilla extract
- 4 tablespoons butter, melted and cooled
- 3 cups diced, peeled apples
Instructions
- Preheat the oven to 350 degrees.
- Add the oats, baking powder, cinnamon, nutmeg, salt and brown sugar to a large bowl and mix together.
- Add the milk, eggs, vanilla extract and cooled butter to another bowl and whisk to combine.
- Spray a 9″ x 13″ baking dish with non-stick cooking spray (or grease with softened butter). Add the diced apples in a single layer in the bottom of the dish.
- Pour the oat mixture over the apples, spreading in an even layer.
- Bake for 35 minutes until the center is set. Remove from the oven and let cool for 5-10 minutes before slicing or scooping out for serving.
Recipe Notes
If making the night before: Cover the baking dish with plastic wrap and refrigerate until ready to bake. Remove the plastic wrap before placing in the oven and bake for 35-40 minutes until the center is set.
Store: Wrap the dish with aluminum foil or plastic wrap and store in the refrigerator. Alternately, remove the baked oatmeal from the dish to an air tight container and refrigerate for up to 5 days.
Reheat: Reheat the oatmeal in the microwave until warmed through.
