  • 3 cups old fashioned oats
  • 1 1/2 teaspoons baking powder
  • 3 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon kosher salt
  • 3/4 cup packed brown sugar
  • 2 1/2 cups whole milk
  • 2 large eggs, beaten

  2. Add the oats, baking powder, cinnamon, nutmeg, salt and brown sugar to a large bowl and mix together.
  3. Add the milk, eggs, vanilla extract and cooled butter to another bowl and whisk to combine.
  4. Spray a 9″ x 13″ baking dish with non-stick cooking spray (or grease with softened butter). Add the diced apples in a single layer in the bottom of the dish.
  5. Pour the oat mixture over the apples, spreading in an even layer.
  6. Bake for 35 minutes until the center is set. Remove from the oven and let cool for 5-10 minutes before slicing or scooping out for serving.

Recipe Notes

If making the night before: Cover the baking dish with plastic wrap and refrigerate until ready to bake. Remove the plastic wrap before placing in the oven and bake for 35-40 minutes until the center is set.

Store: Wrap the dish with aluminum foil or plastic wrap and store in the refrigerator. Alternately, remove the baked oatmeal from the dish to an air tight container and refrigerate for up to 5 days.

Reheat: Reheat the oatmeal in the microwave until warmed through.
