Slow Cooke Mongolian Chicken Recipe

This crock pot chicken is so easy to make, it’s on our constant dinner rotation! Our kids love it, which also makes it a dinner time win, and it’s a pretty healthy chicken recipe when you serve it with steamed vegetables and rice on the side.

This isn’t one of those slow cooker recipes that takes all day to make, either. You only need 4 hours to get this chicken cooked and on the dinner table. NO searing or browning the ingredients ahead of time, just add everything to your crock pot and walk away.

What Is Mongolian Chicken?

Mongolian Chicken is really a take on Mongolian Beef, but you know we Americans do what we do…chicken has a place in just about every recipe. So the beef, or chicken, is typically stir fried then tossed with a sauce made from brown sugar, garlic and ginger then served over or with rice.

Certainly can’t be bad so far, right?

But for this Slow Cooker Mongolian Chicken recipe there’s no need to stir fry, we’re going to pretty much dump everything into a slow cooker, turn it on and walk away.

I will caution you to not overcook this chicken recipe. While you want fork tender, juicy chicken pieces, you don’t want it to be mushy. No one wants mushy chicken on their dinner plate.

So be sure to cut the chicken into about the size pieces you see here, not too thick, not too thin, and only cook for the 4 hours needed. Another amazing this about this slow cooker recipe is that because the chicken is tossed in cornstarch, the sauce literally thickens as it cooks.

No need to thicken the sauce after you’re done, this really is a chicken recipe that cooks itself.

Can I Cut Down On The Sugar In This Chicken Recipe?

Mongolian Chicken or Beef typically has a fair amount of brown sugar in the sauce, which makes it a fan favorite of the kiddos. This gets balanced out by just a little bit of sriracha to get that perfectly sweet and spicy flavor.

If you’re someone that needs to cut down on your sugar intake, there are some great sugar free brown sugar alternatives right at your grocery store!

How Do You Serve Mongolian Chicken?

We like to serve this Slow Cooker Mongolian Chicken with fresh steamed broccoli and white rice. Brown rice will certainly do too, even ramen noodles would be awesome.

For a lower carb meal you can serve this Mongolian chicken just with the broccoli and leave out the rice, it’s so good I can promise you won’t miss it. But if a scoop of rice is doable for you, and the other members of your family, I do suggest serving this chicken recipe with some sort or rice or ramen noodles.

All that crazy delicious garlic and ginger sauce should not be left behind, not a drop of it. How I like to serve this for my boys is to put some rice down in the center of a bowl then spoon the chicken and sauce all over the top.

Broccoli gets it’s own spot on the plate, you can mix it in with the sauce or not – I’ll leave that up to you.
