A Simple Rum Cocktail
One of my favorite vacations ever was our trip to St. John. You can read all about it here, and start planning your vacation as soon as you can. Believe me, you’re never going to want to leave that place.
I’m lucky enough to be going with my family and some good friends back to St. John next month – NEXT MONTH – the planning has been in the works for so long I almost can’t believe that it’s right around the corner.
So many people ask me, what do you do in St. John with kids?
Lay around on all the famous beaches, snorkel, eat seafood and (for us adults) drink rum. Not exactly in that order but all of the above for sure. If your kids can’t be happy on a beach as beautiful as the beaches in St. John, I really don’t have any advice for you.
Every day it’s the same thing, the kids swim and play on the beach. We do the same, enjoy a few cocktails, go out to dinner and get to bed early. That way we have plenty of rest to do the same thing all over again the next day.
This time though I definitely want to go to a couple of the bars in town that play live music and hang. Drink some rum, listen to good music and just enjoy the warm weather. Can’ you tell it’s my favorite place? It’s the perfect vacation. This Coconut Rum Floater reminds me of all the good things about St. John in a glass.

The best part is that there’s only three ingredients – rum, seltzer and coconut water, the trick is in the pouring.
The rum will float on top of the coconut water if you pour it very slowly over the back of a spoon and it’ll start to layer on top.
Since there’s only three ingredients in this Coconut Rum Floater, you need to make sure they are top quality. If you can get your hands on a bottle of Bones Rum, made in St. Thomas, just over the bay from St. John, definitely use that.

This simple and refreshing rum drink brings us right back to the islands!
Ingredients
- 6 oz. coconut water, like Azul
- 2 ounces dark rum
- Plain Seltzer
- Star Fruit for garnish
Instructions
- Add the coconut water to a low ball glass and top with seltzer.
- Layer the rum on top by slowly pouring over the back of a spoon.
- Garnish with a slice of star fruit.
