This Caesar Chicken Salad Bruschetta is perfect for appetizers, snacks, or even a light dinner! This chicken salad is so delicious, even on it’s own!
We are pretty obsessed with our Creamy Caesar Salad Dressing. You know when you make something new that you really, really like and then you keep making it over and over again for weeks?
That’s what we’ve been doing with that salad dressing recipe for a few years now. It’s that good.
Our kids have been spoiled, they don’t really like any kind of bottled salad dressing so we usually have a stash of this caesar dressing or our other favorite creamy dressing recipe in the refrigerator for them to grab.
Since we make salad on most nights for dinner, there’s always some sort of salad fixings in our fridge. The other ingredient that’s usually in our refrigerator is cooked chicken.
Maybe we had a rotisserie chicken one night and shredded the leftover chicken, or maybe we made a bunch of grilled chicken…we do seem to have a lot of chicken.
In comes this delicious, creamy, tangy chicken salad recipe.
What Makes This Chicken Salad Different?
We’re using our favorite homemade Caesar dressing to make this chicken salad instead of plain mayonnaise. The Caesar dressing makes plain old chicken salad pop with flavor! Just wait until you taste it…
You can make this recipe very easily with some leftover, cooked chicken. Or if you just want to whip up some of these delicious treats grab a rotisserie chicken from the store and chop or shred about a pound of the chicken.
That’s all folks. No crazy ingredients, no chopping celery or anything like that because we’re adding all the crunch on top! Shredded lettuce gives these chicken salad appetizers the perfect crunch as you bite into them, along with a crispy slice of toast for the bed.
What Kind Of Bread Should I Use For This Recipe?
Grab any kind of baguette that you like. French, Italian, Semolina, even sourdough would be awesome. Slice the bread and toast it, then let it cool before topping with the caesar chicken salad, lettuce and cheese.
If you’re serving these chicken salad toasts for appetizers, make the chicken salad and toasts ahead of time then assemble right before serving.
Or you can out the chicken salad, lettuce and cheese in a bowl in the center of a platter with the toast slices all around it and let your guests assemble themselves. That’s a fun way to serve this appetizer, and it’s a lot easier than making them all up ahead of time so that’s a solid party win.

All you need to do is ditch the toast and eat this chicken salad as is or serve it in a lettuce wrap with the shredded parmesan cheese. That’s my favorite way to eat this if it’s not on the toasted bread, both ways are super delicious.

This easy chicken salad recipe is so delicious piled on these crispy toast slices for appetizers, lunch or a light dinner!
1 pound shredded, cooked chicken
1 baguette, sliced into 1/2” rounds
1/4 cup olive oil
Kosher Salt and Black pepper
Shredded Parmesan Cheese
Preheat the oven to 400 degrees.
In a medium bowl, toss the chicken with about 1/2 cup of the dressing. You can add a little more or less dressing depending on how you like it, then season with salt and pepper if needed. Wrap with plastic wrap then refrigerate for at least 1/2 hour before using.
Place the bread on a baking sheet. Brush the bread slices with olive oil then season with salt and pepper. Bake for 5-7 minutes until slightly browned and toasted then remove from the oven to cool.
Add some of the chicken salad to each piece of toast then top with lettuce and parmesan cheese. Repeat with remaining pieces of toast then serve immediately.
This chicken salad will keep in the refrigerator for 3 days, so make a double batch for lunch or dinner too!
