Chicken Caesar Bruschetta

This Chicken Caesar Bruschetta is perfect for appetizers, snacks, or even a light dinner! This chicken salad is so delicious, even on it’s own!

Ingredients

  • 1 pound shredded, cooked chicken
  • 1 baguette, sliced into 1/2” rounds
  • 1/4 cup olive oil
  • Kosher Salt and Black pepper
  • Shredded Lettuce
  • Shredded Parmesan Cheese
  • Creamy Caesar Dressing Recipe

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a medium bowl, toss the chicken with about 1/2 cup of the dressing. You can add a little more or less dressing depending on how you like it, then season with salt and pepper if needed. Wrap with plastic wrap then refrigerate for at least 1/2 hour before using.
  3. Place the bread on a baking sheet. Brush the bread slices with olive oil then season with salt and pepper. Bake for 5-7 minutes until slightly browned and toasted then remove from the oven to cool.
  4. Add some of the chicken salad to each piece of toast then top with lettuce and parmesan cheese. Repeat with remaining pieces of toast then serve immediately.

Recipe Notes

This chicken salad will keep in the refrigerator for 3 days, so make a double batch for lunch or dinner too!
